I have to echo the sentiment of another commenter by saying that Tipper could turn the camera on for an hour and just fold laundry and talk, and I would watch the whole thing. At least once! You are a natural teacher and you have such a calm demeanor, you are truly gifted and sharing your gift with the world. Also, I LOVE this soup idea! Roast whatever veggies are about to go bad and turn it into a meal!
My father would open the refrigerator door, and take all the left overs out and even rinse out a ketchup bottle, and put it all in a pot, and cook it on our wood stove .
I've done that before where I had some left over meatloaf, green beans, baked potatoes and I put them all in one pot and cooked it together. I mashed the baked potaoes with a little cream n butter, put the green beans and meatloaf in with a little cheese on top, it was really good.
I make a soup like this whenever I can! Only I make it a little bit more watery. I would’ve added three more cups of coconut milk and even some more chicken stock! And don’t ever be afraid to include any chard part of the vegetables! Just like the onions it’s flavor!I love this! I was like you thinking of what other vegetables I could use to make another soup with . I am always looking for orange vegetables to eat. I have trouble seeing at night and I hope eating more orange vegetables will help with that. And pumpkin is low glycemic food, it doesn’t raise blood sugar as much
I ordered your cookbook, I'm lived in southeastern Ky, I miss the woods, moutains, and Southern folks, the home cooking. My birthday is next Wendsday. I will be 62. My husband passed a little over 3 years ago, we were never blessed with biological children but raised foster sons here in IN. Every year on my birthday, he would give me Southern cook books, native american Cook books, and game cook books because he was a hunter. I miss him so much, so for my birthday, I ordered a couple of days ago, y'alls cookbook, I'm praying it gets here by my birthday on the 20th or at least before Thanksgiving. I enjoy your videos. I do make that soup frequently and I sometimes add cumin and coconut milk for a middle eastern flavor. Sometimes I add sage and leave out tomatoes for a very warm fall flavor. Lovely to see you all enjoying a great new recipe! 💜💐💜

I make this soup quite a bit using whatever I have on hand. I really like when I have cauliflower to add. In the summer I like to use zucchini. I'll often roast the vegetables and then freeze the puree for colder months.

This was such a fun video. That soup was a real collaboration of the womenfolk of the family. Hearing Tipper asking Corrie's advice on cooking seemed like something of a role reversal. That soup is a lot like a Mexican farmhouse technique for making soup. Instead of roasting the vegetables in the oven, they roast them on a big griddle, kind of like the one Matt uses on the porch. They leave the charred bits on, even on the onion, and it doesn't seem to make it bitter. But basically it's the same. I can't wait to try your version. I can just leave out the vegetables I'm allergic to.
I was so inspired by your throw everything in soup I paused the video! I gathered all my bits and pieces of veggies, onion and garlic, herbs, taties, one lone sweet potato and chopped it all up…roasting now and smelling divine! Thanks for the inspiration! 🍅🥕🧄🧅🍠🥖

Tipper mymaternal side of the family is from the south of France my mom my Mere Mere and my aunts all made their soup like that, the vegetables were peeled and boiled and seasoned like you did with herbs and then pureed its called potage As usual Tipper I have squash Envy, getting some next week i roast my squash my carrots beets together like that with olive oil and herbs it caramelizes them I am glad you made this dish took me down memory lane, I don't know the last time I made that, it was nice seeing you and Corey back together in the kitchen I always enjoy seeing you together when I I pull up your cheese or pepper jelly video it all looked delicious thanks for sharing

Hi ladies, I’ve made this with all but the parsnips and I peeled all my veggies. At the end mine was like yours and I wanted it a little less thick, creamy, but not like mashed potatoes so I added Half n Half, you could use any heavy cream but I only had the Half n Half. It was so good! I had coconut milk as I like it in my cereal and my coffee sometimes and in some of my baking, but I just didn’t know if I would like it as much as regular cream. Thank you for this video I enjoyed seeing what you came up with. 😊
Tipper, Get Matt to find you one of those blue plastic barrels. Next season, after drilling drainage holes in the bottom, only fill the bottom up to 1 foot of hardwood for filler to cut down on need for soil. But fill the rest with soil and mulch. Plant your Parsnips in that barrel. They need depth. That should make ya' happier! 👍 ~ Teresa

Looks absolutely delicious! Next time, add that sage! It goes so well with butternut squash. Fry some of the leaves until crispy and add them on top of the soup. So yummy!

Congratulations on your yard sauce. I started making this when I had too many tomatoes. I used squash, tomatoes, onions garlic. Zucchini which was coming out my ears. I used my vitamix and blended it up kind of chunky bcuz we like it that way. I use to make tomatoe soup just add a bit of half and half and with a grilled cheese sandwich you got it made. We like to make chicken parm 27:47 using yard sauce and sometime I just warm it up and eat it over a baked potato. Your bread looks divine Tipper.
i make a root vegetable soup like this, but no sweet potatoes or squash.. instead i use turnips and radishes.. any fall veggie works really. its all so good. i like chicken stock and never tried coconut milk in it, must try that! its a favorite dinner in the cooler nights!
It looks like my butternut squash soup but you have all those vegetables with it! It's a lot of work but it is so good. My recipe calls for a Granny Smith apple and I use a dash of chili powder to give it zing. Instead of the milk, I would have added a bit of chicken broth but that's my thoughts. I may try this later after Thanksgiving. We're still hot down here in Florida but, like Corrie, I think of the folks up in the mountains living in tents. I can deal with the heat for them.
Such a good idea to bake a smorgasbord of vegetables and make a soup. Adding the greens was a good addition to the soup. The bread has to be there too. Thanks Tipper for another good idea.

Brown on roasted vegetables or the fond that is left in a skillet after frying meat is all flavor. It is the result of the Meillard reaction that produces the umami that makes food savory. Black is burned and should not be used. When roasting whole bulbs of garlic, cut across and remove the stem end. When it is roasted, you can just squeeze out the cooked garlic and discard the dry peels and root end. Roasting the vegetables cooks out a lot of the water in them and concentrates the natural flavors.
I love roasted vegetables, & your soup looks delicious. I have literally cooked all day. (I'm so slow now days.) I just put my second batch of rolls in the fridge. I'm having my daughters & their families over for lunch tomorrow. Every inch of my body aches, but I know it will be a good time. I think I've made enough that we could invite 10 more people & still have leftovers!😂 My kids make fun of me, saying I always cook enough for an army. I love that your girls are nearby, & help you in the kitchen at times. You're making lots of good memories.
Soup looks delicious! Well done gals👏👏Next time cut about 1/4 off the top of the garlic bulb before roasting. You’ll be able to squeeze the garlic easier once roasted. You can even make a garlic confit in a tiny cast iron or Dutch oven pot or just wrap a few bulbs in tinfoil and add olive oil and whatever your heart desires. Wrap and roast. I’d add some butter or coconut milk to make the soup silkier and some drizzle of olive oil on top while served. Maybe some toasted sour dough croutons on top.
Ooh, yum. We sometimes order a farm box with whatever is ripe at the moment. I’ve made soups like that occasionally when the box includes a suitable variety. Sometimes it’s butternut and sweet potatoes, sometimes cauliflower, cabbage, leeks and fennel, or whatever combination we get. Always a little stock, some butter and a little cream. Always delicious.

Making soup with whatever you have on hand usually makes great soup but hard to replicate. I love soups but my men aren’t usually crazy about it. They don’t know what they are missing.
I'm going to try this recipe too with similar vegetables, love roasted veggies. The charred bits add extra flavor. I made a white bean with kale soup last week with thyme, salt and pepper, roasted garlic, delicious. Longest part was soaking the beans. Just used the immersion blender. As always thanks for sharing. I'm so glad your soup turned out delicious. It looks like something the baby boys could eat. I wonder if they would like it. My late husband would try to make concoctions like that but his very seldom turned out good. We generally wound up laughing over it & then feeding it to the chickens. He didn't have a knack for "blending" different things together. 😵💫

This is one of my favorite soups to make! So delicious! Pinch of Yum has a wonderful bread recipe called “No Knead Miracle bread.” Both things you made here are in our families favorites!
I've made a similar soup and used red potatoes roasted. It's a great way to get lots of veggies, too. Your bead looked delicious too! God bless you all.
Microwaving the butternut squash for about three minutes makes it SO much easier to peel and chop. (Top and bottom the squash, poke some holes with a paring knife before microwaving. Get some Kuhn Rikon peelers too. You'll be glad you treated yourself...not expensive! Just be sure to dry them well after washing.) Love veggie-dense soups and stews! Thanks for sharing.
I love parsnips! They are my favorite vegetable. I fix them like my Granny did. Fry up some fat back and put the parsnips in to cook, pretty much the same as mustard greens. Salt and pepper and put the lid on and cook until tender. A pan of them and a pone of cornbread and I am a happy camper!
I haven't tried this soup, but now I think I will. The bread--that's how I make mine, just flour, salt, yeast, some olive oil, a dash of cider vinegar, and water, in the Dutch oven. Yours looks great!
It really is much easier to half the squash without peeling and season and place face down on a tray with a little olive oil. Then scoop out the squash to add to soup. It does take time...about 40 mins on 375. But it would mean that the other veggies would roast separately if the other ones need less cook time. I love to make butternut squash soup this way and always add a little milk or cream at end and pulse or use hand mixer to make creamy. Always with some butter added. You can use a veggie or chicken stock and carrots and a couple of potatoes in the soup too along with garlic and onion One seasoning that works well is marjoram, a dash of allspice and salt/pepper. The bread looks great!
Baking the vegetables first just intensifies their flavor compared to just making the soup without baking them first. And as with any soup, there is no end to what vegetables one could use. The amounts of various veggies and the spices one uses just makes the soup a bit different each time. I like a dollop or two of plain yogurt on my soups. Thanks for sharing your version ladies...it looked very tasty....as did that bread.
I would add some heavy cream. I have several recipes similar to this one. Always puree with chicken stock over medium low heat and add heavy cream before serving… stirring till thoroughly mixed. Garnishing with sautéed greens will be the “icing on the cake!” Yum!😋

Tipper, Get Matt to find you one of those blue plastic barrels. Next season, after drilling drainage holes in the bottom, only fill the bottom up to 1 foot of hardwood for filler to cut down on need for soil. But fill the rest with soil and mulch. Plant your Parsnips in that barrel. They need depth. That should make ya' happier! 👍 ~ Teresa

I so wish my hubby would eat roasted vegetables soup like this, but he won’t. He just has never been a soup fan unless it’s tomato soup and then it’s only one small bowl. That soup y’all made looks so good. Enjoy every bite!

Congratulations on your yard sauce. I started making this when I had too many tomatoes. I used squash, tomatoes, onions garlic. Zucchini which was coming out my ears. I used my vitamix and blended it up kind of chunky bcuz we like it that way. I use to make tomatoe soup just add a bit of half and half and with a grilled cheese sandwich you got it made. We like to make chicken parm 27:47 using yard sauce and sometime I just warm it up and eat it over a baked potato. Your bread looks divine Tipper.

i make a root vegetable soup like this, but no sweet potatoes or squash.. instead i use turnips and radishes.. any fall veggie works really. its all so good. i like chicken stock and never tried coconut milk in it, must try that! its a favorite dinner in the cooler nights!
It looks like my butternut squash soup but you have all those vegetables with it! It's a lot of work but it is so good. My recipe calls for a Granny Smith apple and I use a dash of chili powder to give it zing. Instead of the milk, I would have added a bit of chicken broth but that's my thoughts. I may try this later after Thanksgiving. We're still hot down here in Florida but, like Corrie, I think of the folks up in the mountains living in tents. I can deal with the heat for them.
Such a good idea to bake a smorgasbord of vegetables and make a soup. Adding the greens was a good addition to the soup. The bread has to be there too.

Brown on roasted vegetables or the fond that is left in a skillet after frying meat is all flavor. It is the result of the Meillard reaction that produces the umami that makes food savory. Black is burned and should not be used. When roasting whole bulbs of garlic, cut across and remove the stem end. When it is roasted, you can just squeeze out the cooked garlic and discard the dry peels and root end. Roasting the vegetables cooks out a lot of the water in them and concentrates the natural flavors.

I love roasted vegetables, & your soup looks delicious. I have literally cooked all day. (I'm so slow now days.) I just put my second batch of rolls in the fridge. I'm having my daughters & their families over for lunch tomorrow. Every inch of my body aches, but I know it will be a good time. I think I've made enough that we could invite 10 more people & still have leftovers!😂 My kids make fun of me, saying I always cook enough for an army. I love that your girls are nearby, & help you in the kitchen at times. You're making lots of good memories.

Soup looks delicious! Well done gals👏👏Next time cut about 1/4 off the top of the garlic bulb before roasting. You’ll be able to squeeze the garlic easier once roasted. You can even make a garlic confit in a tiny cast iron or Dutch oven pot or just wrap a few bulbs in tinfoil and add olive oil and whatever your heart desires. Wrap and roast. I’d add some butter or coconut milk to make the soup silkier and some drizzle of olive oil on top while served. Maybe some toasted sour dough croutons on top.

Ooh, yum. We sometimes order a farm box with whatever is ripe at the moment. I’ve made soups like that occasionally when the box includes a suitable variety. Sometimes it’s butternut and sweet potatoes, sometimes cauliflower, cabbage, leeks and fennel, or whatever combination we get. Always a little stock, some butter and a little cream. Always delicious.

Making soup with whatever you have on hand usually makes great soup but hard to replicate. I love soups but my men aren’t usually crazy about it. They don’t know what they are missing.
I'm going to try this recipe too with similar vegetables, love roasted veggies. The charred bits add extra flavor. I made a white bean with kale soup last week with thyme, salt and pepper, roasted garlic, delicious. Longest part was soaking the beans. Just used the immersion blender. As always thanks for sharing. I'm so glad your soup turned out delicious. It looks like something the baby boys could eat. I wonder if they would like it. My late husband would try to make concoctions like that but his very seldom turned out good. We generally wound up laughing over it & then feeding it to the chickens. He didn't have a knack for "blending" different things together. 😵💫

Microwaving the butternut squash for about three minutes makes it SO much easier to peel and chop. (Top and bottom the squash, poke some holes with a paring knife before microwaving. Get some Kuhn Rikon peelers too. You'll be glad you treated yourself...not expensive! Just be sure to dry them well after washing.) Love veggie-dense soups and stews! Thanks for sharing.

I love parsnips! They are my favorite vegetable. I fix them like my Granny did. Fry up some fat back and put the parsnips in to cook, pretty much the same as mustard greens. Salt and pepper and put the lid on and cook until tender. A pan of them and a pone of cornbread and I am a happy camper!

I haven't tried this soup, but now I think I will. The bread--that's how I make mine, just flour, salt, yeast, some olive oil, a dash of cider vinegar, and water, in the Dutch oven. Yours looks great!

It really is much easier to half the squash without peeling and season and place face down on a tray with a little olive oil. Then scoop out the squash to add to soup. It does take time...about 40 mins on 375. But it would mean that the other veggies would roast separately if the other ones need less cook time. I love to make butternut squash soup this way and always add a little milk or cream at end and pulse or use hand mixer to make creamy. Always with some butter added. You can use a veggie or chicken stock and carrots and a couple of potatoes in the soup too along with garlic and onion One seasoning that works well is marjoram, a dash of allspice and salt/pepper. The bread looks great!

Baking the vegetables first just intensifies their flavor compared to just making the soup without baking them first. And as with any soup, there is no end to what vegetables one could use. The amounts of various veggies and the spices one uses just makes the soup a bit different each time. I like a dollop or two of plain yogurt on my soups. Thanks for sharing your version ladies...it looked very tasty....as did that bread.
I would add some heavy cream. I have several recipes similar to this one. Always puree with chicken stock over medium low heat and add heavy cream before serving… stirring till thoroughly mixed. Garnishing with sautéed greens will be the “icing on the cake!” Yum!😋
