  • Pasta primavera is almost always a vegetarian dish, but the best way to make it not that is to add pancetta, also known as “Italian bacon,” and the results are tremendously delicious bowl of pasta. It's the rare combo of something that’s rich and decadent, but also fresh and vibrant. Enjoy!

      I've been watching for about eight years, but the first Chef John recipe I actually made was Peposo dell'Impruneta, six years ago. I've been hooked since then. Made this tonight - continues the six-year streak of great recipes!

    Just made this. Had my first serving and went back for more. This. This is amazing. I don't have enough adjectives to describe all the flavors you taste with this dish. I'm in the clouds!!! I cook for my father-in-law and his wife twice a month. I'm making this for them. I'll double it so they have leftovers. With a french loaf of buttered bread... hello!!! Thank you, Chef John.     There used to be a place called Garfunkle's in Piccadilly Circus. They had the very best pasta primavera I've ever eaten. I was in London for two weeks, and probably ate there ten times. Unforgettable!

    The olive oil in the pan is smiling. And I'm not surprised as it's about to get all that gorgeous pancetta. That's hard to get in the UK where I live. Ho hum. Lovely recipe Chef.

    Tried it today. Tastes really nice. No idea if my dish tastes anything like its supposed to - because I have no point of comparison - but it anyway just tates really good 👍🏼
    PS: If theres one thing I'd change, it's I'd up the amount of asparagus

    I like that a lot.
    I also got stuck in a rut of Napolitana / Marinara sauce with everything. Then I tried just straight up pesto and pasta. Mind blown.
    This kinda reminds me of that, but minty.

    Pro tip for cleaning blenders: put some hot/warm water in your “dirty” blender with a drop or two of dishwashing liquid. Making sure the top is on and sealed, press the start button and…hey presto! Blender clean as new!

    Using less fatty meat and less olive oil could make this into a wonderful low calorie version, perfect for meal prep when cutting!

    For me, Pancetta is kind of like the pig version of anchovies. It's not just less sweet than bacon. It's a lot funkier.

    If you're going to just remove oil in the end, you might as well not add it. Start the bacon in some water for heat distribution, then the rendering will start and it won't stick to the pan.

      It's how Americans pronounce it. Grates (hah!) me the wrong way too. Doubly for being English-Italian.
      Though I guess I know where it comes from: it's similar to how it's pronounced in some Italian dialects which would've been spoken by the (mostly) Southern Italian diaspora. Add a few decades and you get that kind of linguistic butchering ;)
