I found a 4th way if you leave coffee beans in a mason jar of sugar for like a month you can make coffee infused sugar if you use turbinado sugar for a sprinkling on top
Awesome sweet rolls. Not overly sweet and great espresso flavor. The only downside is I followed the recipe exactly and the milk qty is off. I believe 1 cup vs 2 cups is sufficient. I used 2 cups milk and had to add way more flour than should be needed. I will definitely be making these again but will use less milk than the recipe calls for and will start with 1 cup starting off and add more if needed! Thanks for another recipe! Yep I had the same experience. I think there’s a typo on the recipe. In the video here it looks like only 1 cup of milk is used. I just tried it today, and while it came out okay I also ended up needing far more flour to reach the desired consistency. Hopefully Chef John notices! Also, being in Florida, the butter in the filling never solidified into the desired paste consistency.. so I had to place it in the fridge 😅

Give it a try! Yeast breads are actually pretty forgiving and delicious even if 5hey aren’t perfect. Also, Chef John’s recipes are carefully crafted & explained.

There's likely a typo on your website recipe, as 2 cups of milk to 4 cups of flour makes for a thick pancake like mix. I ended up using over 2 cups more flour before it started resembling a dough. Most other recipies have a nearer to 3:1 ratio of dry to wet.

Hey Chef John I love all the recipe videos, but would you ever consider making some videos focusing on techniques to apply to cooking in general (how to marinade, how to season, etc) or how to combine ingredients you might find in a typical cabinet into functional meals, without "buying for the recipe"

I owned a coffee shop, most folks didn't know about origin coffees, (IE: Columbia, Ethiopia, Sumatra, Kona, The only American coffee btw). I think some customers believed there was a French Vanilla coffee bean tree perhaps somewhere in Le Midi France maybe. IDK Shamefully I made a lot of money off flavored coffee. Most folks are also unaware that the true flavor in any coffee comes from the roast. Star Bucks trendy burnt garbage ruined coffee. It's easy to burn a bean. It's a skill to roast light, or medium roast. It's basically lower slower roasting, which is neither profitable or efficient. The best breakfast blends are mostly light roast, (Highly caffeinated) with a peppering of dark, usually Columbian. Dark roast is actually lower in caffeine than light roast. Also more antioxidance are present in lighter roast than in the char of dark roast. Italians perfected the marriage of dark coffees & creams using steam exhaust from the boiler of the espresso machine to create the magnificent libation known as the Latte'. So, I totally understand your recoil, when you tried a pumpkin spiced latte'
A bit of cardamom might go well in these; cardamom and coffee is a classic combination popular in the middle east, plus you'd be going somewhere in the direction of swedish Kardemummabullar
I see that you have the CVS shower caps to use as a reusable covering. The advantage is that they are clear, the disadvantage is that the elastic is flimsy and breaks down with washing.
I am one of those people who isn't fond of coffee, and my wife absolutely hates it. I am wondering if it would work to swap the coffee for cocoa powder (besides the bit already in the filling):?

They also make coffee flavored "chips" that could either be added to the filling or sprinkled on top.

Rolling out block of puff pastry tip works with dough, too... roll out 4 corners first and it will help greatly to keep straight lines on all sides.
