    I appreciate that you called Sensei Motokichi "skilled" instead of "talented". As an artist (not a cook or chef or anything, though I'm learning), chalking up results to "talent" discounts all the practise put in. You can have a talent for a craft, but to be good at it you need to practise to turn that talent into skill.

    I flew to Japan for our honeymoon... it was truly heartbreaking that we could not get a table until the day AFTER we left. This chef is an absolute legend, he came out and apologized to US... he is such a nice, wholesome person.

    Sensei Motokichi actually travelled to Mexico at one point to teach people how to make Omurice there. So there’s definitely a great chance he will accept your invitation and teach you it himself!
    He also has a UA-cam channel called “KichiKichi Omurice motokichi” where he normally do vlogs or cooking tutorials there. You should definitely check it out Uncle Roger!

      I would love to see the two of them do a video together and have Uncle Roger try making it himself. Obviously he'd excel at the fried rice, but the omelet 😅 would love to find out how many tries it'd take him to get it right 😅. Also, I wanna visit Japan someday and eat at his place, the food looks amazing. Obviously that's not the only reason I wanna visit, but it's part of it. 😊

    Sensei Motokichi energy is so wonderful he reminds me of uncle Iroh for those few days he got to make tea with zuko and then was invited to serve the Earth king, and he was so ecstatic because he was Recognized for something that he loves dearly, Making people happy. Sensei Moto puts a pound of love on every plate, and i'm so happy he gets to share his passion with the world.

    I love how wholesome and just impressive that episode was. It's such a difficult dish to make that even Uncle Roger can't help but be impressed by a result that is not perfect, by Andrew I think his name was, his attempt.
    And then Chef Motokichi... Very fitting that he would get an Uncle+ title. My jaw dropped twice during his performance, when he first did those really crazy tosses, without even looking at the pan, really, and just catching everything perfectly. And when he tossed the omelet onto the plate through the air, and it landed and split by itself perfectly... It's like beholding a divine miracle, or something. Absolutely incredible!

    When I was in culinary school my teacher was insane about us learning to flip an egg in a pan without breaking the yolk. At the time I didn't get it why it was so important but i was so excited when i finally mastered it. Watching stuff like this just reminded me of how hard it is to learn the art and how good it feels to master it.

    There was a Korean restaurant in Duluth, Georgia named Pepper Garden. Their omurice has a light cream sauce that was the perfect balance between sweet and savory. They closed down and I haven't been able to find anything like it since.

    One quick expansion to what Uncle Roger said. "Kodawari" (拘り) means "obsession, fixation, pickiness," and it can also refer to a restaurant's specialty. "Kodawarinuku" (こだわり抜く) means "to refuse to compromise on quality." That's probably closer to what Uncle Roger means about the Japanese desire to strive towards perfection.
    (But, I'm not a native speaker, so there are probably nuances and connotations that I don't fully understand.)

    I love how chef motokichi describes his own experience learning how to cook omurice.
    It took him several months to do it exactly right, but once he did, he was amazed, and was able to do it perfectly ever since.
    Thats why hes so nice to first timers, because he knows how long it takes to properly develop a skill.

    This chef preparing this dish is probably my favorite thing in culinary arts. It’s awesome to see how Michelin star chefs conduct themselves, or seeing a traditional dish done perfectly, but the performance and style of the dish is satisfying to watch every single time

    Been waiting ages for this guy. Uncle isn’t enough for Motokichi. Dude is a legit master of Omurice! Totally deserving of his unique title!
    Also the guy in the video doesn’t give himself credit. Mans got taught by the master himself and made a very good omurice for his first try like you couldn’t get better than that for a first try.

    5:35 Surprisingly, Chef Motokichi does make his own demi glace, and he taught Andrew how to make it in a few videos for About To Eat for ox tongue stew and a redo for omurice. And for 2700 yen for omurice, it had better be real demi glace.

    I went there on December 30th. Was supposed to fly from LAX to China and I had a layover in Haneda. Took a 3 hour train to Kyoto, waited from 12:30pm to like 5:30 to get a reservation, ate for an hour, took a 3 hour train back to Haneda, just to eat at this guy's restaurant. worth it.

    We were lucky enough to stumble upon his restaurant when visiting Kyoto last summer. We were able to queue in line for non reservations and was seated same night, it was definitely a performance to experience.

      @@zahidshoumik8967 Steven did do an episode of Dish Granted with Uncle Roger in 2022, where he and Kiano Moju made a special fried rice for him and nephew Nigel. But since Kiano did most of the work, she got the praise and the gold star while Steven just got roasted by Uncle Roger. 😆

She's a Tasty producer, and is without a doubt the best and most talented chef they have on the channel. I don't recall if she's ever done a fried rice video, but I think Uncle Roger would enjoy her "Make it Fancy" series.

    I actually had to try and make this. That demi glace', I made myself it it was classic French, with Japanese Dashi and Motokichi's element of smart ass, a couple squirts of ketchup in it. Well, the is the main ingredients of everyone else's omurice. Worth the learning and tasted great!

    Credit also to Andrew for doing this with a LANGUAGE BARRIER, there's no way Rie can translate quickly enough to convey what's necessary during the cooking process, there genuinely just isn't enough time, so I'm super impressed by how well he learned despite not knowing the language.
