All my life I've lived in fear of breaking the yolk while frying an egg, and here you go and do it on purpose. That was a bit liberating. Also, love the quick vs slow. It's a great idea.
In my Royal Navy cooking days, a broken yolk was the norm for a 'banjo sandwich' That is a lightly fried broken yolk egg, salt & pepper, between two slices of well buttered soft white bread.
My dad used to make these and now my partner's dad made them too! Smashed egg sammich!!! We just put an egg and a little mayo on the bun (or toast) - occasionally cheese.
there is a channel by the name "Ethan Chlebowski" he does some pretty quick meals like these pretty frequently. One of my new favorites along with this channel.
Bro I feel like your videos cover all the bases on what a good UA-cam culinary channel should bring. Can’t stop watching them. Thanks for the content. You’re honest, funny, and super knowledgeable and talented. Thanks for not being food-snobby and annoying like some of the other big UA-camrs out there!
The four-minute version with the brioche bun and the ham is so good and repeatable ...VERY easy-to-make. I love it and yes it really only takes 4 minutes that's weekdaying
I do this one too, but I also throw the ham in the pan after the egg is fried, fry the egg then plop it on the ham while it gets a little sizzle, if I have cheese, I often put it on the ham just before the egg to melt it all together, then the whole thing onto the bun. (I personally like a bit of jalapeno mustard on mine). sometimes I have a ham steak not sliced ham... but it all works.
I made this but mashed the two ideas. I used a soft white bun (toasted), premade turkey sausage which I pre smashed like you did, then did the egg and cheese. IT WAS AMAZING! I cooked the egg how you showed and it made such a huge difference. The wife said it's the best breakfast sandwich she's ever had!!!
Wow, I’ve been separating my whites and yolks for fried eggs for a while now, thought it was just me! But if you like a hard cooked white with caramelized edges AND a runny yolk, that’s the best way to do it. Great videos, Brian!
I’m trying to learn more cooking, and I’ve always had trouble with the Eggs over Easy (I think that’s what these are), but I decided to try the 4 minute recipe with just the egg, and it turned out pretty good. I put to much salt and pepper on (I’m using a salt shaker and a pepper grinder), but the egg turned out like what I always tend to see on other cooking channels. The key for me was that you mentioned that it should be over medium-low heat, and gave a time limit for how long to cook them. A lot of channels don’t say what the heat you should be using. I also stuck with the cooking time; normally, I wait until the thicker section around the yolk is also white, and end up cooking the egg way too long. Moral of the story: I’m not a great cook, but your show helped me get a grip on how to cook eggs the way I like. Thanks.
Do this on a griddle if you have a big family or are serving lots of people at once. Toasty buns, eggs, cheese, sausage all at once! 🤗 you can never go wrong with a good breakfast sandwich! Great video 👍🏻
Hi Bri... I like this new video format. You give us something to eat quickly but also options to 'chef it up' and aspire to. Also, we can upgrade a bit at time like adding that homemade sausage patty to the first version of the sandwich.
That sausage patty looks really good for making a whole bunch and freezing them to easily use in the morning. Same with the english muffins. Make like like ten extra for the freezer and in the morning quickly make a breakfast sandwich. Good video, I'm usually a scrambled eggs and toast kind of guy for the convenience this can definitely fit in my repertoire. If you ever do breakfast burritos, the long version could become a short one with some defrosting/finishing recommendations.
I always figure #1, we can never see technique too often, and #2, people haven’t always watched every video that was put out so may not ever have even heard of stretch and fold!

What I can't stand about some of these youtube videos nowadays is it can be 5 minutes before the meat and potatoes (no pun intended) of the video even starts. This was gold!! Gold Jerry Gold!
Cool trick cooking the egg white, first, then adding a bare yoke to the center. You could start with two eggs, separated, cook each egg white, then add the yokes so there is no waste to make two sammies.
I'm up to double the sausage recipe/normal muffins and then freeze the sausage patties flat. Excellent breakfast sandwich meal prepping. Also doing the ring mold egg and it's really excellent with the jammy yolk. Thanks a lot!

Not hating on other youtubers but sometimes their recipes require obnoxious amounts of time, effort, work, or money/equipment that can't be accomplished or are unrealistic for your average home chef that works a full time job w a family. You seem to bridge that gap of quality vs effort much better than a lot of the others
Nice work Bri! Looks good. I'm a 4 minute guy. Otherwise breakfast becomes lunch!! Surprised to see that the guy who makes EVERYTHING from scratch uses store bought ghee. Glad to see you are getting some cool sponsers. Trade Coffee is something I will check out. THANKS!

Love the show. I've beed doing this quick version for years. WIth Brioche or English Muffins. One thing I do is put the cheese then the ham on and flip back over to warm/melt. Also a small dash pf Kewpie Mayo on the bun is fantastic. Thanks as always.
Similar to my go-to breakfast sandwich except I don't make my own English muffin and instead of hot honey I use truffle mustard. Try it! It plays SO NICELY on a breakfast sando.

And being able to restaurant quality food is awesome! I feel like a superhero! Yes, before the pandemic, i could only reheat processed & frozen & RTE food. It was pathetic & unhealthy. I have not eaten fastfood since learning to cook from you & other youtubers, coz they taste bleh already with so much chemicals & additives on everything. Really never thought i could cook on a daily basis, real food. And never thought i could bake, more so. Thank ya!!! Keep it up!!!

great. now i am hungry af and its 1am. looks delicious! quick little tip: break up the english muffin with a fork instead of cutting. creates a more uneven surface for more crispy bits and sauce adherence. greez from vienna!
I love the yolk so much I use 2 per sandwich. Usually I use a ring mold but I'm going to have to try starting the white first because of the better centering.
The first sammy impresses me. The second version impresses the folks I sammy for. Awesome video my man! I appreciate a good stretch and fold. Especially since I've not taken it to that level yet. I'm working my way up! Baby steps!
I work at a lakeside grill type place and when i work mornings that first egg sandwich is quite literally exactly what I make myself for breakfast, minus some bacon and avocado spread/hot sauce.
My trick for a quick from-scratch breakfast sandwich is to make basically an egg casserole, pouring a bunch of scrambled eggs in a very buttered dish along with crumbled sausage and shredded cheese. Cover, bake til it's set, slice it into squares, and now you have something delicious to slap on an English muffin. I keep them in the freezer to be warmed up whenever I want.
If you got it, add orange zest to your breakfast sausage mix. Zest half or whole into your sausage mix, cut the orange and enjoy your post meal snack or juice it.
As someone from NC, you should try a deep fried buttermilk battered boneless chicken thigh on a fresh buttermilk biscuit. The breakfast of kings. I prefer mine with a thicc slice of cheddar, colby jack or more commonly hoop (farmer's cheese) served plated with gravy on top fork and knife style. Just fine by itself or coated in honey butter. Can't go wrong either way.
Always use the tines of two forks to gently break the English muffin in half. This is so you get a rough inner texture that toasts well. The whole process is fantastic though.

Seeing that R.B. Rice sausage and Schnucks is making me nostalgic for my hometown, St. Lou-eee! But your handmade sausage recipe looks really flavorful. I'll have to give it a try.
I can attest that these English muffins are awesome. Can you tell us more about how you would freeze the leftover dough? Or are you freezing cooked, sliced English muffins? Also, is the lid to your stainless steel bowl available or is that just a pizza pan that you use as a lid?
I'll add that if you split them before freezing then you can defrost/toast in one go in the toaster. Oh, and fork the muffins, don't slice. The nooks and crannies toast up better than a neat cut.
I’m making that first one tomorrow. The second looks amazing and I’ll tell myself I’ll make it one day but won’t. I know me too well. The hot honey looks like something I need in my life though.
You should make the "poolish" and then it will stand on your kitchen sink, and guilt you into making the muffins, that is my plan for tomorrow, the poolish is made!
Hey Bri, could you possibly post more often than once a week? I think I begin to go into withdrawal, but I’m not sure, because this has never happened to me before!
Brian… As a home cook that is always trying to perfect a recipe, try a new approach or something new, I am really enjoying your channel. I’ve been working to perfect different types of pizza dough for 10 years. Lol. I tried a cassoulet last year. Had difficulty finding traditional high quality Tarbais beans. My wife and children don’t eat duck, so I substituted chicken thighs. How about you show us your take at an awesome at home cassoulet? Best of luck. :)
Thanks for a great channel! You are such a great inspiration for my cooking. And I learn many new techniques and practices by watching your videos. Super fun and knowledgeable! I wonder where do you buy your plastic containers that you use all the time? Do you have a link to Amazon? Are they dishwasher safe?
Your cornmeal always looks so rustic and hearty. It looks like it was made by the Myans or something. That rediculous egg trick is so pro. Love the vid B!!
So “pro tip” the way I do my breakfast sandwich is I get a cast iron muffin pan .. put it on my stove top… spray it .. and put the egg in it .. the on the other muffin spaces … put pancake mix put a drop of syrup as soon as you put the mix in .. and the other one I put the sausage patty .. they all fit in one pan .. I flip them with a spoon… and in 5 mins .. BOOM egg McMuffin Btw I subbed to you last Friday and have watched about 20 of your videos
The timing on this is so weird. I kept seeing people in my friends group on twitter talking about getting a sausage and egg mcmuffin, then I did on a day where I had run out of coffee before work, all over the last 7 days and now this. It is like the sausage egg and cheese mcmuffin is tied to fate.

Some Japanese morning meals include foods like cheese, white toast, soup, leafy salad and grilled fish.
@@msr1116 That is one stupid reason to fire someone.
@@Super8Rescue but it's not just cheese. What's normal to you may not be normal to everyone else. I eat rice for breakfast. Some people would say that's "not normal" but it's just different depending on your culture..and cheese is used alot in different breakfast dishes.
It’s a 12” pizza pan and I freeze once baked and cooled.
I'll add that if you split them before freezing then you can defrost/toast in one go in the toaster. Oh, and fork the muffins, don't slice. The nooks and crannies toast up better than a neat cut.
Yes friend, this is a good video. Great to do the quick and then the cheffy version. 👩🍳
these deserve a kiss .. he's good
I need more than once a week upload from Bri.
Mr. Brian. Thank You soooooooo.... much for this fantastic tasty sandwich.
Thanks for watching
10:54 and now I have a new favorite way to cook eggs. Awesome. Thanks!
I’m making that first one tomorrow. The second looks amazing and I’ll tell myself I’ll make it one day but won’t. I know me too well. The hot honey looks like something I need in my life though.
Good luck with the firstie. It’s so fun
Talk about one extreme and the other. Both great sandwiches! Awesome video.
Ohhh trippin' flamingo, brother! I could LIVE on that stuff!
Quick V slow is great. I’m likely gonna do the first one for actual eating, but watch the second to learn something for later.
I’m happy to see your channel taking off. Both of these look amazing even though I’m pregnant and have to cook my eggs all the way through now ughh 😭
Your cornmeal always looks so rustic and hearty. It looks like it was made by the Myans or something. That rediculous egg trick is so pro. Love the vid B!!
That is so tempting! 😋
BOOM egg McMuffin
Btw I subbed to you last Friday and have watched about 20 of your videos
The first sandwich was my sweet spot. The rest was gilding the Lilly Briboy style. :) But some good individual tips for bread and eggs methods.
We love easy-to-make sandwiches 🥪😋.
Super solid recipes. Another 10/10 video!!
We love Trade!!!
One of my favorite sponsors
My girl and I always follow your great recipes from Italy. Keep doing great :)
my most favorite sandwich in the world... egg, ham and cheese.
The splitting of the white and yolk is genius.
Brian tu es génial🙌 merci j’adore tes recettes 👏 thank you Brian😘
Very good Recipe thanks for sharing my friend enjoyed watching it 👍🏾👍🏾👍🏾👍🏾
Thanks Moon! Cool name
Made the English muffins this weekend and they were a hit with my friends. Great, easy to follow recipe
The egg trick is a game changer. Thank you.
My parents used to make scrambled eggs i the a little soy sauce crab and or shrimp with cognac. Scallions...apsome time green peas...
Wow! Dude! First ultimate BLT now ultimate B fast sammich from B man!
So glad I'm subbed to this. My breakfast sandwich game is on point.
