- Today's episode is about an easy Sans Rival Cake recipe. It is a Filipino cake made of layers of buttercream, meringue and topped with chopped cashew nuts.

Ingredients you will need:
For the meringue:
10 egg whites, room temperature
1 ½ cup chopped cashew nuts (use roasted)
1 cup white sugar
1 tsp cream of tartar
1 tsp vanilla extract
For the frosting and topping:
10 egg yolks
1 cup white sugar
6 tbsp of water
2 tsp vanilla extract
2 cups unsalted butter, room temperature
1 cup chopped cashew nuts (use roasted)
1/4 tsp salt
Preheat oven to 160C

I’ve been trying to figure out what this cake was called forever. On a birthday I had a long time ago, my cousins’ wife picked one up and when I sliced and bit into it, it was the most unique sensation I’ve ever had eating a Filipino cake. Forget the ube, forget the German chocolate, forget the mango at Red Ribbon: Sans rival is just that - it has NO rival.

We do not have Celsius can we preheat in Fahrenheit . So it ok to do 320 degrees Fahrenheit 30-40 min?
Also can I do a tray and just cut into 4 pieces for the merengue and use stand up mixer ???
Hi, you can just convert it to Fahrenheit. Yes, you can do a tray but it thickness might be different

Whats happening in the egg whites? Why is it that i cant get the right consistency for the merengue when i started using the mixer and waited for it to be frothy?
Did you use room temperature eggs? and made sure no bits of egg yolk mixed in?

What happened to it?
use real or compound butter. In the sugar water mixture if you don't have thermometer you can put a small drop of it in a cold water and if you can turn it into a ball then it is ready and if it dissolve it means it is not yet ready.
