BEST BANANA CARROT MUFFIN RECIPE!

These muffins are definitely a favorite in our home so we had to share them with you! I love making a double batch and putting some in the freezer for a quick and easy breakfast option, or baking extras for neighbors, family, or friends! Hope you enjoy!

FULL RECIPE:
1 1/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1/2 cup sugar
1/4 cup brown sugar
1/2 cup melted butter
2 eggs (room temperature)
1 tsp vanilla
1 cup shredded carrot
2 Ripe mashed bananas
1/2 cup pecans (optional)
Preheat oven to 375°
In a large bowl mix dry ingredients : Flour, baking powder, baking soda, salt, cinnamon, sugar, & brown sugar.
In a separate bowl whisk together the melted butter, eggs, and vanilla.
Pour wet ingredients into the dry ingredients and mix until just combined. Stir in shredded carrots and mashed bananas. Pour into greased muffin pan.
Bake 20-25 min.
