The Dump & Bake idea is genius! I never make it the same way twice, and it's always delicious. I've used wild rice, basmati, white, brown, wild. I love it with farro. I use whatever veggies I have--carrots, sprouts, broccoli, cauliflower. If there's an extra person coming to dinner I throw in another can of beans. It's seriously easy and such comfort food!! My friend... your dump on the wonderful green bell pepper and prioritizing red over it is blasphemous (especially to dump on those of us with better taste!). Using red pepper for stuffed bell peppers or on top of pizza INSTEAD of using green is _RIDONKULOUS!_
Red peppers are SWEET, versus green which is SAVORY! I can understand red bell peppers in a salad, or even in ADDITION to green on a pizza, but something is wrong with _YOU,_ *not others* for hating on green bell peppers!

Chickpeas are def my favourite overall! Love chickpea curry, chickpea quinoa patties and spicy curry chickpea spread for the actual chickpeas. But I mostly love chickpea flour- use it for making vegan omelette, scramble and I even use it for pancakes&bread☺️ 10/10 legume

I’m amused by this because today at work a customer asked me where “chi chi beans” are. I was like?? She’s like garbanzo beans. I felt like a fake vegan but I’ve never heard that!! 😂😂
In Italian we call them she-sha-dee. This is the phonetic spelling I don’t know how to spell in Italian, only cook. 😊

Those look so good! Will try them. I have been making a similar version of brown rice, chickpeas and broccoli with the broth in the oven for a long while and it is my favorite. The rice comes so amazingly fluffy. I prefer to cook rice in the oven over using the Instant pot.

Oooooo this is crazy but I've been wanting to make basically this exact mushroom rice casserole because once of my favorite side dishes is coconut mushroom brown rice and I wanted to make a dump and bake version and herrrrre it is 😄

Green bell peppers definitely aren’t as good, but they are like a third of the price and ~in this economy~ I consider that an important factor lol

Chick Peas (Pois Chiches) are very popular here in France. As the weather warms up, I like to make salads and sandwiches especially when I am on the go. I often make a mock tuna salad which is delicious but I would like a few other sandwich fillers. Would you have any thoughts?

Have you ever heard of tips to help digest beans? Every time I eat them I get super bloated and backed up TBH. It’s the reason I can’t be fully vegan because I can’t digest them….
