low carb pasta that tastes and works just like the real thing.

- although I know there's nothing low carb like the pastas we know. this is as close as I've ever tasted and tried.
this is not my recipe it was created by black tie kitchen. and im entirely greatful for his work on this.
the recipe is:
80g (1/2 C ) vital wheat glutton
80g (1/2 C) lupin flour
2 large eggs
oat fiber for pasta dusting. optional
in a food processor mix all ingredients together to form a dough. or by hand. knead until smooth and elastic. wrap in saran wrap, leave at room temp. for 30 minutes to rest .
once rested roll with pasta machine or rolling pin until very thin, use pasta cutter or roll up and cut into strips with a knife. get a pot of salt water to rolling boil, add pasta and cook 3 minutes exactly. strain and serve. for Lasagna cook pasta and use with ingredients before baking .
alfredo sauce:
1 stick of butter
2 cloves minced garlic
2 cups heavy cream
1/4 tsp. white pepper
1/4 tsp salt
1 1/2 C. grated parmesan cheese.
in sauce pan melt butter with garlic, add salt and pepper, then add 2c heavy cream. bring to a boil stirring often, lower heat to simmer until slightly thickened. remove pot off stove, add parmesan cheese. mix well and while stirring on medium heat cook until thickened. then add shrimp or chicken if you would like. serve over your favorite pasta.

That looks hummy. FYI- have you ever looked at the ingredients on your 'great value' heavy cream container? I know, it should be cream, right?! ... You'll be shocked. Now I have to look at the ingredients of EVERYTHING.
This is definitely the very best low carb pasta. I find dusting with Lupin flour better than dusting with oat fibre. I've yet to get my pasta machine to do a good job on fettuccini but a pizza cutter is the next best thing

There is a pastry roller that has 4 or 5 blades .. it cuts perfect size fettuccini noodles. I saw one at a second hand shop one time , Had it a couple of years before i used it . Didn't feel like pulling out my pasta cutter one day and thought,,hmm try this and it was fabulous.

Fantastic video -- what does the pasta taste like... i had chickpea pasta once and the texture and flavor was not great -- but it was store bought if that would make a difference.. I am curious of the taste of lupin flour.. is it close to regular pasta or taste like beans or something .. lol ..I think yours looks so darn good and it is one of my favorite dishes..
@louonUT it turned out ok, however we now mill our own flours And found the ancient grain kamut ( aka korhasan) works good with my husband instead. Without this wheat the best pasta for diabetics we found was using spaghetti squash. This pasta on this video works but it was a texture thing for us.
Just found out a rice that has a glycemic index of 41, which is amazing. It is from Louisiana. It is called Parish Rice. I ordered some from their web site. $6.99 for 2 lbs, yeah, I know, a little expensive, but can't wait to try it. I hope this will not touch hubby's sugar and if he likes it.

Thanks for sharing! I stopped buying the Spring salad mix when I ate something that made my lips sting, only to find out there's nettle included in it. 🥺
I've never seen nettle in it, there is a peppery green called arugula that can be strong. You can make up your own spring mix as well.

I don't really have any particular brands except oat fiber I use modern mountain due to the color more white like a flour. Other wise I use what's affordable

Can you make it in bulk and dry it out for storage?
Truthfully I'm not sure I've never done that. And I now use fresh milled kamut wheat instead these days. This works amazing with my diabetic husband

I used sweet lupine powder but it still tasted disgustingly bitter. What can you do? It felt great, but unfortunately it didn't taste good.
I'm looking into using whole milled wheat berries to make pasta. We will test this also.
