- ya'll this is seriously amazing dish,I never knew butternut squash could be so good besides as soup. if you want to make a smaller amount 1/2 the recipe.
BUTTERNUT SQUASH MAC AND CHEESE
1 lb chopped fresh butternut squash or frozen
1 small onion chopped
2 cloves or more garlic
1 Tbsp butter
1 Tbsp olive oil
1 tsp. salt
3-4c. chicken broth
1 bay leaf
1/4 tsp nutMeg (optional)
1-2C. of grated cheese of choice
salt and pepper to taste.
3/4C. milk of choice
bread crumbs
cooked pasta of choice
saute onions in butter and olive oil, until carmelized and soft. add garlic until scent is released, add butternut squash, chicken broth and 1 bay leaf. simmer until the squash is fork tender ready to mash.
prepare pasta according to package.
strain, reservering liquid, add to a blender, processor or emulsion blender, add milk and puree until very smooth. if too thick add reserved broth until silky smooth creamy consistency. add back to put and add cheese handful at a time until melted (as to your taste. ).
preheat oven 350 degrees.
Add cooked pasta, mix well. then add to a greased baking dish, top with bread crumbs and extra cheese if wanted. bake until Golden brown and cheese is melted. and serve.
butternut squash is an amazing food item that freezes well. to have on the go.

I bought a butternut squash. The acorn squash felt greasy (strange). I have many colorful pairs of compression socks; ankle and knee high. They are great. I'd like to see what you do with your butternut squash. Get well soon. And stay warm. My high today was 39° Cold. Brrr freezing.

I pray you feel better and the cause if your edema is revealed. I had unexplained edema. It turns out it was a rare side effect to a medication I was on.

Making micro greens indoors absolutely anyone can. Kale ,lettuce yes as long as you have frost covers.

How do you prep a butternut squash to freeze? Do you cook it first? Or peel it ? I'm clueless 😆
You cut the ends off, peel (it can be tough use a knife) cut your butternut squash into 1" chunks and add to a freezer bag and freeze. At the round end cut in half, remove seeds and cut into chucks and freeze

No I allowed the rain, we have been getting enough rain I havent had to water myself
