INGREDIENTS + NOTES
#1 Protein Chocolate Batter 0:20
2 tbsp white tahini
3 tbsp natural peanut butter
2 tbsp maple syrup
3 tbsp vanilla protein powder (sub with ground flax or oat flour)
pinch of salt
2 ½ tbsp unsweetened cocoa powder
Note: not using protein powder might make these a little less sweet, taste test and feel free to add another tsp of syrup.
serve with:
yogurt bowls
smoothie bowls
cereal bowls
or roll into little bites to snack on
→ ~ 3-4 servings, keep sealed in fridge for up to 1 week
#2 Freezer Breakfast Burritos 1:25
350g-500g potatoes, diced (12.3oz-17.6oz OR roughy 1 pound)
~ 1 tbsp veg oil
generous pinch of salt
spices (for example: dash of each paprika, turmeric, black pepper, chili powder)
1 can black beans
2 handfuls vegan pizza cheese
2 spring onions
1 tbsp sriracha or ketchup
6-8 medium tortillas
hummus
baby spinach
→ yields 6-8 wraps, depending on wraps
#3 Overnight Rice Pudding 4:31
5-6 tbsp rice flour
pinch of salt
pinch of cinnamon, cardamom (optional)
1 cup (240ml) water
a splash of non dairy milk to adjust the consistency
1-2 tsp sweetener (maple syrup etc)
→ whisk cold until there aren’t anymore clumps
→ bring to a boil, whisking carefully
→ simmer over medium until thickened
pear topping:
1 pear, diced
1 tsp vegan butter
dash of cinnamon
a few walnuts, crushed
→ serves 1
Note: I would not recommend doing batch cooking here, as it doesn’t last longer than 2 days!
#4 Chickpea ‘Egg’ Sandwiches 6:40
2 cloves garlic
1 tbsp olive oil
100g spinach (around 3 cups, or 3.5oz)
pinch of salt, spices of choice
½ cup chickpea flour (65g)
1 pinch salt
1 tbsp white wine vinegar
⅓ cup + 1 tbsp non dairy milk (90ml)
→ Yields 4 chickpea eggs,
Feel free to double/triple this recipe if meal prepping!
per sandwich:
1 English muffin
hummus
tomato
sesame seeds
vegan chili mayo
#5 Cookie Dough Oat Brownies 8:25
For the brownies:
1 cup oats (90g)
1/2 cup unsweetened cocoa powder (55g)
1 tbsp ground flax seeds
1 tbsp cornstarch
3/4 tsp baking soda
1/2 tsp salt
1/2 cup maple syrup (120g)
a few drops vanilla aroma / caramel flavour drops
1/2 cup apple sauce (125g)
1/3 cup oil (80ml)
3 tbsp water
For the cookie dough:
1 cup oats, small cut (90g)
1 pinch salt
1 can white beans, rinsed + drained (240g)
⅓ cup maple syrup (80ml)
1 tsp vanilla extract Or a few drops vanilla aroma
2 tbsp sunflower oil OR melted vegan butter/coconut oil
3-4 tbsp non dairy milk
¼ cup chocolate chips, or more if you like (40g)
→ yields 1 (20cm/8inch) brownie pan, 9 pieces

I LOVE that you don't have a microwave! We don't have one either. But all these mealprep video's everywhere rely on heating things in the microwave. Everytime I'm just at a loss over how I'm supposed to reheat things because no one has ever explained HOW. You are my hero and I will now watch all your video's!
if you dont own a microwave you can reheat most things on a regular pan(adding water if needed), it tends to taste even better cuz it doesn’t dry the food out like the microwave does, but the downside is doing more dishes after

@@coilycutie436 No I understand it might seem weird. I used to have a microwave, I have no issues with them. But my partner doesn't want one. Or a deep fryer for that matter. He thinks both are unhealthy. He explained to me ones why microwaves are supposedly bad but it was a bunch of science stuff that I couldn't manage to remember😅 I want to respect his wishes. I can cook fine without them. Just meal prep re-heating that has become difficult☺

Hey Mina, thank you for the new recipes I did the chocolate protein batter. I made it with chocolate protein powder instead of vanilla protein powder and cocoa. I didn't need any salt and I only added one tablespoon of syrup because my protein powder is sweet . It is delicious I used one quarter of it
put it on my Greek yogurt and fresh blueberries it was delicious!

These wraps look so delicitous. I would only recommend to NOT buy stuff that says "PROTEIN" on them. This is just a way to hop on to the hype train and pull the money right out of you pocket. This stuff is soo crazy overpriced most of the time. If you want more protein, add chickpeas or tofu to your wraps. Much healthier and cheaper :)

the chocolate chip cookie-bownies are easily one of the best vegan (and gluten free!) brownies I've ever made :D I made one batch at the beginning of the week, ate them every morning for breakfast for the following 4 days and loved them so much :)

Ohh that Protein crumble looks amazing I‘m sure it would taste amazing as protein balls as well. Also I love how you always give options/adaptations like swapping the protein for more oats.
BTW have you ever thought about getting an Air fryer? I think you’d really enjoy it - gets things soo crispy and makes a lot more sense (energy and time wise) for the small batches you often make.

And Chickpea flour is SUCH an amazing ingredient isn’t it? Actually it works really well in sweet recipes (cake, cookies, muffins and stuff) as well - maybe you could give that a try when creating said wholesome desserts ❤️

it's so neat that you can find apfelmus in so many supermarkets in germany! it's hard to come by / expensive where i am :(
you can make your own really easily! Peel apple, cut into chunks and cook with a splash of water for a few min. You can mash the apple chunks with a fork or a blender :)
@@Mina_Rome thanks mina! i actually tried it out with a blended ripe pear instead and it worked great
you can also puree raw apples. you don't need to cook them. And applesauce in germany (Apfelmuß) is with lits of sugar. If you want something without sugar, you have to buy Apfelmark and this is more expensive.

The skin on potatoes is soooo healthy! Its where most of the vitamins/minerals are! Never peel potatoes unless you really have to

Can you recommend a good blender to make your recipes? I tried making the brownie, but my blender struggled a lot to blend the beans without adding too much liquid, and it was a torture to get the mixture out and then finally wash the blender. x_x (cause mine can't be taken apart like yours)

For those breakfast sandwiches, you could also add a vegan sausage patty or some vegan ham or bacon to the sandwich.

The chickpea egg sandwiches are extremely easy to make and they turn out tasty, however my batter didn't have the same consistency as yours, mine was significantly runnier, so I'm not sure if the measurements in the description match..

Your brownie recipe got me so inspired, that I got your cookbook and I really enjoy it! Esp. the variety of recipes using a lot of different ingredients and since I cant eat a lot of soy, I love, that most of the dishes dont use it the sweet potato oat bars are one of my favs atm!

I feel like my mind was blown by you using wet parchment paper! I've literally never seen anyone do that before, lol! Is it to help shape it to the pan easier? And the extra moisture doesn't affect the bake (ie: making it soggy)?
Exactly it's so it keeps its shape so you can the batter more easily. I've never had an issue with the moisture!

i always thought that freezing potatoes (and sweetpotatoes for that matter) messes with the taste? maybe thats just a myth, but my mom & grandmom taught me to never freeze potatoes as if it was a cooking-crime, so i've never actually done it 😅
ohhh interesting!! I think if u season them well beforehand there's still just as yummy, maybe sweet potatoes will come out bit more different?
@@Mina_Rome apparently, regular potatoes change their taste and become more sweet, so i would be curious to see what would happen with frozen sweet potatoes :D maybe its worth a try...anyways, great video☺

Ok Mina! But, do you work 9h to 5h in a job other than youtube? If not, I dont know why you make those busy meals.It's not a good reference for real workers. We dont alway's have time to do this and that. On your side, you alway's have time to meal cook everything at mesure of the time. For the reste, you chould make more recipes on a daily basic and even challenging your self to make other cuntries recipes to make it more fun a game changing.
But isn’t the point of meal prep to save time? I thinks it’s a great reference for workers and students with busy schedules

If you whant to have a good breakfast in the morning without strugling, think in the evening about what you will like for breakfast the next day. These are all girl meals. Even though I’d probably like them, my boyfriend would have to eat like 6 of those bowls and 5 burritos and probably wouldn’t be satisfied anyway (He is not overweight at all, and healthy). This makes your recipes not sustainable and hella costly in my case
