NickJohnification, when you are making something like macarons. It is best to do it by hand instead of using a mixer. With an electric mixer, you can over whip egg whites easier. So he was just showing us the better way to do it. Hope this helps you understand.

I love giving macarons as a gift! I usually go for a box a bit deeper then a macarons circumference, and than stack them so you can see colors and fillings!

Came here from Emmy's channel & those macarons look AMAZING! You make creating then look effortless - I'm going to have to try sometime.
One tip that I have learned along the way as a chef is to blend the sugar and almond flour in a food processor and sift a few times, and what ever is left in the sifter throw it away. Never push it through. While I am sure they came out delicious they look a bit grainy. It always comes out with a smoother top and seems to lift them up more than spreading out while baking if you process them a few times with sifting. Good luck and happy creating.

I thought you should use fine almond flour almost as fine as flour. It ensures better puff and texture they are flat and raw!

Wow the cookie turned out realllyyy flat and wide. I'm used to the cookie portion being a bit thicker and smaller in diameter. But great flavor combos! My preferred flavor is the mocha one (i usually mix espresso granules with the ganache, but i think ill add almonds next time too!) I'll try the orange creamsicle one soon :) have you tried matching a cassis one yet? Its kinda like a a blueberry/currant/blackberry all in one. I remember trying one of those flavors in an assorted macaron pack from Trader Joes and it was reallllyyy good. Well, enough of my rambling. Thanks for another video!

You over mixed on all of them cause they're all flat and the feet are thin
yea because he had to divide them and color them, so extra mixing was required, (He should have undermixed then divided so it won't be as bad)
Not that I am claiming to be a professional or expert on macarons, but aren't this macarons flat? His rose water macarons came out a lot better... I wonder what went wrong.
Yeahh that's what I was thinking, they aren't..the best macarons. I thought his technique was kind of lousy in the beginning of the video, he sped through it but I can see he wasn't as careful as you should be when making macarons! I'm sure they still taste great though

Does it make a difference between spooning your meringue into the dry ingredients and adding the dry ingredients into the meringue's bowl? I guess I'm asking how sensitive are the egg whites?

Too big and flat plus the signature rims are terrible and they aren't crunchy enough. So he probably didnt compensate the egg whites for the flavors/add in's, making them heavy, spongy, flat under-baked. Plus hes saying it 'mac-a-roon' and thats wrong too.
actually, macaroon is correct. according to many other professional chefs, they have pronounced it as so but have added "french" in the front. this term is accurate. but macaron is also another way to say it. i say it as macaron. you don't have to get so ticked off.

Hi! I have an issue with the vegetable food coloring because they tend to get be it the buttercream, fondant or cookies a bit bitter.. Could you maybe recommend a particular brand or give tips on how to properly color food?? Thanks for the awesome videos!
What kind of food coloring do you use? I've never seen colors that bright and vibrant before!
Lovely macarons! Loved it! Please, could you tell me how long did it take for Amy to get your macarons? Didn't they get soggy? I want to give some macarons as a gift, but I'm afraid they will become soggy, specially the ones with more moisture. Also, I realized you didn't "maturate" your macarons. I thought maturation was crucial in order to achieve the right texture
