This is definitely true regarding a strict traditional french macaron recipe. By letting the eggs sit out for a long period of time, evaporation occurs and lowers the excess water moisture in the whites. If there is too much water content in a given egg (the hen(s) retained too much water while bearing eggs), it could technically effect the consistency of the macaron batter. I made these last night, I was supercasual about it cuz they weren't for gifting so I used a spoon instead of a piping bag, I didn't have almond flour so I used some brazil nut flour I had and no mint flavouring, a little vanilla though. So they turned out more like whoopie pies but man were they awesome tasting! I made up the rest of the whipcream into a mousse with the left over chocolate filling and dolluped it on top...one day I will make them fancier. Thank you so much for this recipe !
I failed 15 or so times before I got the hang of them... It's a tough process to nail perfectly, so you have to be patient in order to get right.... and of course spare ingredients..lol.. Hang in there and thanks for watching!

Very minty and chocolaty 😍 the only thing is that I used food coloring to color the cookies mint green, but when they came out of the oven they were brown! Maybe I baked them too long, I really don't know. Or maybe it was the food coloring.
