    Also, you have to take humidity into consideration as well. Here in L.a. it's basically dessert conditions, so it tends to speed up evaporation like crazy.

    This is definitely true regarding a strict traditional french macaron recipe. By letting the eggs sit out for a long period of time, evaporation occurs and lowers the excess water moisture in the whites. If there is too much water content in a given egg (the hen(s) retained too much water while bearing eggs), it could technically effect the consistency of the macaron batter. So by letting the whites "age", you ensure a consistent macaron a 1000 times over. Food for thought. Thanks for watching!!

    These sat out (dried) a bit too long, so you'll have to make them a few time to get the texture just right...Trust me, I'm still trying to perfect my macaron making skills. Thanks for watching!

    250 celsius is probably perfect, funny enough. Actually, it might be a little too hot, but around that temp should be fine to cook these mac's. Thanks for watching!!!

    I made these last night, I was supercasual about it cuz they weren't for gifting so I used a spoon instead of a piping bag, I didn't have almond flour so I used some brazil nut flour I had and no mint flavouring, a little vanilla though. So they turned out more like whoopie pies but man were they awesome tasting! I made up the rest of the whipcream into a mousse with the left over chocolate filling and dolluped it on top...one day I will make them fancier. Thank you so much for this recipe !

    I failed 15 or so times before I got the hang of them... It's a tough process to nail perfectly, so you have to be patient in order to get right.... and of course spare ingredients..lol.. Hang in there and thanks for watching!

    Tried making macarons for the first time with Byron's recipe and I'm happy to say that it worked fantastic! Of course it doesn't look as nice as Byron's, but the taste and the texture was phenomenal! Just like the ones sold at the bakeries :)

    I'm used to using decimals in recipes because it translates ratios a bit easier than fractions. I'm terrible at math so the easier the better for me.

    To "age" the eggs, all you do is let the whites sit out for at least 24 hrs (72hrs is typical for a strict recipe) and lightly cover them with plastic.

    I really appreciate your reply, I was not trying to be nit-picky if it came off that way, I am aware that there are various ways to make macaroons and it is very difficult to make them just right. But this is the first time I have seen mint chocolate chip and I definitely will attempt them :)

    Hey Byron! I made these last weekend and they were amazing!! Very minty and chocolaty 😍 the only thing is that I used food coloring to color the cookies mint green, but when they came out of the oven they were brown! Maybe I baked them too long, I really don't know. Or maybe it was the food coloring.
