I'd say reading is the number one thing - textbooks, news articles, Investopedia, etc. I do learn a lot from my day to day work but often times I still need external sources to develop my knowledge.

That's a good video idea! In terms of advice, I'd say just read and learn as much as you can whether it be from books, financial news, or web resources like Seeking Alpha or Investopedia.
I think it will be a while before risk managers are completely replaced by AI although certain parts of the job like coding, news synthesis, are already augmented by the use of AI. But you still need a human to direct such tasks.
