Try to beat your egg white until stiff. That's the key to rise the cake. While the cake especially for the first 40min, do not open the oven door. Check the cake with skewer only after the time mentioned. It's normal the cake deflate slightly, it shouldn't deflate a lot, just like what you see in the video ☺️
Hi. Yes store in fridge for overnight in a cake box or airtight container. This sponge cake you can serve anytime whenever you want to eat, it will still be soft.

I make ur cake it was amazing but I had little issue, after I took the cake out of the oven is shrink is it because I didn’t take it of the tin right away but I still make the cream tasted yummy but smaller

Hi. Yes many do experience the same. Few things you'll need to make sure. First, mix the meringue until stiff, which means when you topside the bowl the meringue will not drop off (careful when you turn your bowl upside down ☺️) this is help to stabilise the cake in the oven and after the bake. Secondly, bake an additional 2-3 min on lower heat (maybe 150c), this is to prevent a sudden sink when you remove cake from oven. Thirdly, I normally don't do this but you can try. Once remove from the oven, turn the pan upside down on the cooling rack. Leave it until the cake is cool. This is one way to help to reduce the sinking. Bear in mind, the cake will sink or shrink slightly even for mine which is normal ☺️ hope this will help
Fiona, if I wanted to use a 9in round springform pan would I 1¹/² times the recipe? Would the temperatures be the same as well? I know the baking time would increase (more batter to bake up) but could you give me a rough estimate as to how much time it might be? Hi Tammie. For 9inch round, yes 1½ times is comfortable. For baking time, will almost the same. 160c for 30 minutes, then reduce to 150c for another 30minutes + 3 minutes. So total bake is 63 minutes. Try that. ☺️
