This carrot and green chilies relish, or gajar marcha nu athanu was a condiment that was almost always present at my MaaIL’s table, she had a zest for spicy foods and just like my Gujarati household her table always had a fresh relish, kachumbar or athano at every meal.
She served it as a side with almost any Indian main meal, but always with pilau or biryani or magiyo. It makes a quick snack when folded between a Rotli or paratha.
It’s quick and easy to assemble and keeps very well in the refrigerator- if it lasts more than two days!
Ingredients
2 medium carrots, peeled and cut into matchsticks or julienned
6 Thai green chilies split down the middle
1 tbsp. garlic paste
1 tbsp. light olive oil
5 tbsp. tomato ketchup
1/2 tsp. turmeric powder
1 tsp. red chili powder
1/2 bunch cilantro finely chopped
2 teaspoons pink salt or to taste
Mix everything together transfer to a bowl and cover and let it sit for half an hour.
Stays fresh in the fridge for up to two weeks.
