Today, I’ll make a really moist chocolate cake.
This cake is a chocolate cake that is heavy and soft.
Even if the ingredients are the same, even if the order of the process is changed, the texture is very different.
I really think this cake is like that.
I really enjoyed it because I wanted to have a rich and moist chocolate cake after a long time.
My husband's favorite Swiss meringue, made with chocolate buttercream.
It was a combination that went well together.
When I glazed it overall, it felt more moist.
The fun of the texture came to life when I put the chocolate crumbs on the side.

● Ingredients
237ml = 1 cup
● Moist chocolate cake
(Mold size: 16cm*7cm)
50 g (1/4 cup) unsalted butter
55 g dark chocolate (1/3 cup-chopped)
35 g heavy cream (2 Tbsp + 1 tsp)
1 egg
3 yolk
5ml (1tsp) vanilla extract
15 g of cocoa powder (2 Tbsp + 1 tsp)
45 g cake flour (1/4 cup + 2 Tbsp)
15g almond powder (2 Tbsp-replaceable with soft flour)
A pinch of salt
15 g milk (1 Tbsp)
3 egg whites
65 g (1/3 cup) sugar
● Chocolate butter cream frosting
220 g (1 cup) unsalted butter
3 egg whites (105 g)
142 g (1/2 cup + 3 Tbsp) sugar
A pinch of salt
5ml vanilla extract
110 g (2/3 cup) dark chocolate
12 g cocoa powder (2 Tbsp)

60 g sugar (4 Tbsp + 2 tsp)
90g starch syrup (1/2 cup + 1 tsp)
(Or glucose)
50 g condensed milk (3 Tbsp + 1 tsp)
7 g (1 Tbsp) powdered gelatin
+ 35g water)
95 g (1/2 cup + 1 Tbsp) dark chocolate
● Syrup
50 g water (3 tablespoons + 1 teaspoon)
35 g (3 tablespoons) sugar
5 ml (1 tsp) kahlua or rum
How to make ㅡㅡㅡ ㅡㅡ
1. Weigh water and sugar
2. Melt the sugar in the microwave and...
3. Add rum and mix and cool to room temperature.

Thank you Boone, I've tried the cake recipe and it really worked (I've been failed before with another recipe, not yours). I added more flour to match your batter flow. The cake rising up well and the texture and the taste is great. In addition, I only use hand whisk, no electric mixer. Love it !!!

Now that looks like a good cake. Did you know that you can whip ganache? Just melt equal quantities of cream and chocolate together, cool slightly and whisk on high for 10 minutes. It comes out like chocolate mousse but also sets if you put it in the fridge

아침에 이 동영상 보자마자 이건 못참겠더라고요 크리스마스 케이크 다먹은지 얼마 안돼서 1월 넘어서나 케이크 만들어야지 했는데.. 촉촉한 초코케이크라니.. 안되겠더라고요
일단 시트가 엄청 촉촉하고 맛있어요 반죽할 때 초코가 가라앉는지 밑바닥이 진하게 보여서 좀 많이 뒤적여 줬더니 머랭이 좀 죽었어요 그래도 3장 잘 나오고 윗 뚜껑 먹었는데 .. 크 너무 촉촉하고 맛나요 ㅠㅠㅠㅠㅠ 윗면이 크게 터지고 했지만 맛만 있음 됐쥬 ㅎㅎ 처음 만들어보는 초코버터크림은 만들면서 분리 난 것같고 매끄럽지 않고 , 날이 추워 빨리 굳는지 휘핑하기 힘들더라고요 버터크림을 처음 만들어봐서 당황했지만 한번씩 따뜻하게 해주면서 매끄럽게 완성했어요 크림양도 남김없이 딱 맞고요
시럽도 듬뿍듬뿍 엄청 발랐는데도 많이 안달고 촉촉하고 너무 맛났어요
제 입엔 생크림보다 버터크림이 더 맞는건지 이 레시피가 엄청난 맛인지 처음이라 잘 모르겠지만, 쌍따봉 맛이에요 묵직하면서 부드러우면서 초코향도 기가막히고 분베님 최고에요❤️
그리고 전 글리사쥬를 영상에서는 좀 남는거 같아서 1/4줄여서 했는데 모자르더라고요 ㅋㅋㅋㅋㅋㅋ 이쁘게 좌르르 안떨어져요 날이 추워서 금방 굳어서 전자렌지 한번 돌려했는대도 좀 되게 흘렀어요 글리사쥬 많이해서 남을 걱정에 줄였는데 글리사쥬 남은건 맛있는 초코젤리더라고요 글리사쥬는 무조건 넉넉하게 해야하나봐요!!

스위스 버터 크림은 흰자 만 이용하기 때문에 버터가 들어가면 처음엔 분리 현상이 거의 있어요~^^
그 때 당황하지 마시고..
무념무상으로 계속 휘핑하다보면..
8ㅡ10분 경과 후엔 부드러운 크림이 완성 될 거에요 ~~
초코 버터크림 케이크가 오롯아롯님 댁에 연휴동안 달콤한 행복을 주게 되어 기뻐요~^^
덕분에 올 한 해 기분좋게 마무리 하는 거 같아요..

I don't know how I missed this video. That is one major chocolate cake. I love SMBC. The only downside to it? It hardens once placed in the fridge so you have to let either the entire cake or your slice come to room temp before eating. I love the amount of frosting you used between your layers. Great cake to frosting ratio!! The mirror glaze is just beautiful. Another masterpiece... 👍🏻
Also, this is the 1st time I've seen someone make SMBC with a hand mixer. Looks incredibly smooth and fluffy... 😋
This cake is not hard even if you put it in the refrigerator

@@BooneBake I'm not saying the cake (sponge) is hard. It's the frosting that gets hard once it's placed in the fridge. I know. I've made several batches of SMBC. Due to the butter its bound to get hard. I just made a batch of cinnamon flavored SMBC last week. It was fine while it sat out in room temp but once it went into the fridge I had to let the slice I cut come to room temp. If not the frosting isn't light and fluffy....
