Also their sausage-making, -smoking and -curing is phenomenally easy to do & produces great tasty results. This is so exciting! I love seeing simple, non-technical dishes that I can cook easily at home. With cheap and cheerful, readily-available ingredients. This casserole looks yum, never in a million years would I have thought to put prunes in!

Huge fan of you Hugh! I'd love to see the sorts of dishes that most other chefs are 'afraid' of doing. Pig's trotters, offal, brawn, livers, and all sorts of delicious dishes that you can make from the less used parts of an animal.

Hugh is already doing everything right and if youtube means access to shows like Scandimania (which we in Scandinavia actually can't see), then you might just go to eleven! Hugh is one of the few who managed to not deviate from his philosophy and still managed to run a successful business out of it and that we like! How much money and time did Hugh not spend on the "Chicken Out" campaign? This was not business - this was for the chickens! I'm more than happy to buy all the books and DVD's from River Cottage in order to support the cause, philosophy and business and I more than welcome a youtube channel with Hugh and his both great and sometimes crazy ideas ;) Broadcast TV is too limited nowadays and online videos is by far the better choice if you want to reach the masses and still make a living out of it.

My two favourite chefs in one video, what could possibly be better?! :)x For the River Cottage channel I'd love to see tips for gardening in small spaces and what veggies you can get the most use out of, if you only have a small patch to grow on? And just whatever really, there has never been a bad episode of RC, so I can't imagine the channel will be anything but amazing!
Would this be good to freeze ? I like making batches of food to freeze as I live on my own now and have my wonderful daughter over weekends and Wednesday nights. Always in a rush on wed night after work so was wondering if I put this in the oven on timer it would be piping hot for us to eat when I get home?
I agree with a few others here in that it would be nice to see more food tube videos aimed at feeding one or two people. So much of the time the recipes take a long time to cook, have hard to find or expensive ingredients and are made to feed at least four or more people. Simple, quick and inexpensive but flavorful would be wonderful.

Simple, quick dishes would be great. Got into cooking a couple of years ago, but on UA-cam and the like, things I've learnt are either family-style dishes that take a lot of time cooking, and also aren't particularly healthy for only me, as I live alone for the moment. The trap a lot of people fall into, I suppose, is giving recipes with loads of obscure ingredients. Personally I'd love to see some simple dishes with things you might have lying around in your cupboard, if that makes sense. :) Bonus points if they can be made in small quantities.
Have you checked out SourceFed? Their whole thing is basically easy but healthy food. They started out kind of as an effort to get us young 'uns cooking better, their recipes aren't too complicated but quite useful! They simplify a lot of more advanced recipies, too.
Is there any more of a description of the sausages you could give for those of us who live in the U.S. -- veal? pork? anything comparable on this side of the pond?
Cynthia Clampitt I'm in SC and I've done this with Irish Bangers, smoked pork sausage, and fresh andouille sausage that I've smoked; it always tastes great! Try the sausage you like, if it isn't herb filled, add in some herbs! Also this meal is great with golden raisins in the place of prunes!

andoriz0r I've tried it and it wasn't overkill sweetness, it was rather savory. A good spiced and herb loaded sausage balances all that!
