      I think it’s going to be a slower recovery than they led me to believe. I guess that comes along with age.

    There are now some direct-on-jar vacuum sealers on Amazon that can create a vacuum as low as -75 kPa. I couldn’t see the ratings for your machine, but it is possible that it may not be nearly as strong. I bought one (UNERVER M12) for sealing my coffee beans, and I can barely pry the lid off the jar once sealed. Best wishes 😊

      I’ll go check it out. Thanks! I think EVERY vacuum sealer should be required to list its vacuum strength. I e used many and they vary greatly.

    Would adding desiccant packs (food grade of course!) help with the shelf life of some of these things? Because that marshmallow powder looked awfully good.

      For some items oxygen removers are very helpful. They are especially good for single ingredient foods like flour, oats, and rice. They are terrible for items high in sugar. So mixed items with sugar in them just don’t seem to do well with oxygen removers. Another example is coffee. It’s best to leave it as coffee beans for long term storage. As far as marshmallows I think I’ll just do them in small batches.

    Sugar does not vacuum seal well. Going to guess that is the problem with the marshmallows?

      I’m thinking it was the corn syrup. Sugar can get hard but you can easily break it down again. This was more like it was boiled into a hard candy.
