    FOR EVERYONE WHO USES CUPS AND SPOONS, HERE IS THE RECIPE:
    Biscuit Base:
    2 tbsp butter
    1/3 cup + 1 tbsp shortbread cookie crumbs (same as digestive biscuits)
    2 tsp light corn syrup (same as golden syrup)
    Cupcakes:
    1/3 cup chocolate chips
    2/3 cup all purpose flour
    2 tbsp cocoa powder
    3/4 cup granulated sugar
    1/2 tsp baking soda
    pinch salt
    2 small or 1 1/2 large eggs
    1/2 cup cold coffee
    1/2 cup buttermilk (or regular milk with 1/2 tsp vinegar or lemon juice)
    1/3 cup + 2 tbsp vegetable oil
    Raspberry Jam
    MARSHMALLOWY MERINGUE FROSTING:
    3 large egg whites
    1 cup + 3 tbsp granulated sugar
    7 tbsp corn syrup
    1/4 tsp cream of tartar
    1 tsp vanilla extract
    pinch salt
    2 tbsp water
    Chocolate coating:
    1 1/2 cups + 1 tbsp semisweet chocolate
    3 tbsp vegetable or coconut oil
    Any other recipes i should convert by youtubers who use grams/mils? reply and i will for sure do them!

    Using an ice cream scoop to scoop out the cupcake batter is really easy and it makes all of the cakes equal! Luv the vid btw

    Gema, Thank you for doing this! I made this with chocolate Graham on the bottom, plain sponge with a chocolate chip and strawberry goo, stuffed with a whole strawberry preserve and topped with a chocolate whipped cream. Turned out absolutely divine! Thank you for the idea!

    making an adapted version of these for my friend's birthday today! I'm going to make them s'mores by using graham crackers for the base instead of digestive biscuits, filling them with chocolate ganache instead of the jam, and torching the frosting instead of dipping it. can't wait!

    A great tip to press the biscuit base down quick, is to take another cupcake tin and press on top :D

    Brilliant recipe. I've used your chocolate cup cake recipe (yesterday actually) and it went down a storm. They have a thing here in Denmark called Flødeboller which is marshmallow covered in chocolate. I think these will go down really well among the local natives here. Looking forward to trying this out 😋

    I just tried doing the meringue with honey (as I had neither syrup nor liquid glucose at hand). It turned out great! Of course, you can taste the honey, but it isn't too overpowering in my opinion :)

    I'm thinking of turning these into ghost cupcakes for Halloween and was wondering the best way of producing smooth sides. Use a larger nozzle and do a big blob? Flatten out sides with a damp spatula?
    Also how would you adapt the chocolate coating if using white chocolate?

    Fantastic recipe Jemma! I made the cupcakes and they were delicious, but I would say that 100ml of golden syrup for the meringue icing was way too much, it still tasted fine, but I would have preferred it to be maybe even half that amount. No worries though because I'll make them again :D

    Whenever you use cocoa, it isn't specified whether it's natural or dutch-processed. Does that mean it doesn't matter which one we use?

    Does the marshmallowy meringue droop after 10 minutes or so?
    I noticed after you put them on the cupcakes, you put them in the fridge for 15-20 minutes

    Hey Jemma!!
    I just took a crack at these...they taste amazing - so no issue there!!
    But...I couldn’t get my icing stiff enough, it collapsed when I piped it on. I’m not sure if it was stiff enough, if in doubt can I beat it longer to stiffen it up?
    Can’t wait to bake my through all your cupcakes!!

    Help!!! Will the chocolate coating melt if I leave them overnight in room temperature? From what I understand, Jemma usually recommend us to keep our cupcakes in room temperature since no one enjoys hard cakes...
