Even the presenter gets confused and talks about expansion when he is actually contracting. The way you would do it with film is slightly overexposing the film to give shadow detail and decrease your development to retain highlight detail. But it is hard to translate that to digital which works differently.
for digital camera..most information are store in the right side of the histogram that determine the brightness...you want to get as much information from the shadow as possible without blowing out. It is much more ideal to get a flat and boring histogram to later work on the edit than shooting right off the bat the result you are looking for on digital camera.

Why ruin your image in post by underexposing 2 stops, when you know you like the Ansel Adam "effect" and could just underexpose 2 stops in camera?
at the beginning, you say having whites blown out, which is wrong, because there's no red color indicating there is no info.
