- One of my favorite things to do is take complicated, labor-intensive dishes, and create simplified, more approachable versions any home cook can pull off. But sometimes, we take an already simple and easy recipe, and making even more so. Don’t worry; you still get to call it “chisaupepo.” Enjoy!

Made it last night, and it was so good that I'm making it again tonight.
Right in the middle of eating this! My family loves it. I tweaked a few things to get my kids more into it. Za’atar and a squeeze of grilled lemon was amazing!

This could be a good series idea. Revamping older recipes to be “simpler” one pan versions for people looking for something a little quicker/easier/etc.

Yes. Don't have to heat the oven in the summer. Kind of like the skillet lasagna recipes.
Absolutely. Great idea, Higgs. I know that I'm willing to try this version tonight, but the real pan version, I would only have time for a couple of nights a month.
I made this last night. I pork chorizo in the freezer and figured that would be awesome. Bought a red bell pepper, poblano pepper, jalapeño peppers, potatoes and chicken thighs and put it together chef Jon way. It was awesome with chorizo! Wife wants it again tonight for dinner.

Thanks for posting this. It was very tasty, super easy and fun to make.
I'd dump in 2 scambled eggs and call this breakfast, with a toasted bagel and coffee.
That sounds outstanding.
I'd add about 4-6oz of freshly sliced mushrooms, some basil, parsley, oregano, tarragon, and with the broth or wine or water, a Tbs or three of tomato paste or sauce and, in my typical American overkill style, some shredded mozzarella.

The oven roasted one is one of my favorite things to make - I'm going to have to give this version a try. Seems like a friendlier version for a weeknight!
In the roasting pan I usually marinate them in a bit of wine, mustard & a touch of Worcestershire (plus evoo, salt & pepper, of course). I can't wait to try it this way. Thanks

This was just great. I have modified this slightly - I have added some powdered turmeric and fresh dill and it came out just sublime. Served this over basmati rice it was just simply delicious. YES! I love the original Chisaupepo, but it's always one of those "this feeds a small crowd and I am not a crowd....", this is perfect... and not just because I was literally in the process of figuring out dinner.
I had all of these ingredients, just made this for the first time and it was absolutely bomb with some campanelle pasta which sucked in those juices perfectly. Thanks for this recipe!
