    My mouth is watering. I grew up in a community that was primarily Mexican but there was a large Filipino community as well. Any potlucks at school always had pancit and I crave it to this dayyyy.

    I’m so in love! My Filipino coworkers at my hospital make this delicious dish to sell and raise money for a lot of different agencies, I buy buy buy every time they make it!! They also make the egg rolls which are so delicious with the lumpia sauce!!! Their noodles are much skinnier than these though.

      pancit guisado, the thinner noodles. This is pancit canton. We have the mix guisado-canton as well, and the lomi and the miki and so many others :)

      he used pancit canton on this one. I think you tasted the pancit bihon but there is also a version that combines bihon and canton version. There's so many versions of this. It would have been amazing if he put some crushed chicharon 🙂

    OMG my mom is Ilocano!! Mabuhay!! Love it!! Everyone has their own way. My mom uses pancit bihon....maybe because that's what is available here. She thinks my pancit is better than hers.....too be expected, I learned from the best!! I also make some bomb a$$ lumpia!!

    Always love how Chef Sheldon recognizes that people will always say the best is from their mom. That’s why I laugh when people say a restaurant doesn’t make a dish right when it’s something like pancit when it’s such a regionally diverse dish. Even a chef in the next street or town over could have a distinctly different version of a dish.

    The wok is the main cooking vessel in south-east Asia and China. Pansit, pad Thai, fried rice, fish head curry, etc. There's a whole lot of dishes cooked in a wok so having one opens up a lot of possibilities.

    I remembered the time when my grandfather was so pissed at this food. We yse to cook and eat pancit during birthday because it was said that it can make you life longer. My grandfather on of his birthday was so pissed that he eventually said that this food is a curse making it a hindrance for him to rest for good because he ate to much of it

    Amazing to learn that bihon is the same in Malaysia....we call this rice noodle bihun or beehoon!

    Our family style is very similar, only we use bihon noodles, more patis and soy sauce, no oyster sauce nor anato seeds. The rest is almost the same. Cabbage, carrots, lots of garlic and sometimes green beans with pork and chicken, or chicken and shrimp. your version is really nice too though. Always love to try other versions of pancit.

    I believe that you can cook anything in a wok! When I was moving from San Jose to Pennsylvania, I was in my apartment with everything shipped out. I only had a bowl a plate a cup and my wok. I learned just how versatile my wok was. If you can only have one pan, it should be a wok.

    I remember back home in Cebu, when it's Fiesta, our cooks cooked them outside, on a fire from piles of coconut wood and this big wok and the Pancit and any food cooked on it, tastes really extra delicious! I miss home. Thanks for showcasing our food and culture kabayan!

    Love Pancit. I prefer to make it with both the thick Canton and skinny rice noodles. Learned it from my Filipino friends when I lived in San Diego. Also make some mean Lumpia but with ground turkey.

    My dad was a cook in the navy and he would make pancit outside on a camping stove and a wok. He'd mix bihon and canton. We were not rich so he'd use dried shrimp. We have two Calamansi trees overloaded with ripe fruit. When he was alive, the trees were still too young. Now he's gone and I'm stuck with tons of fruit that I'm basically giving them away as my pansit is not as good as my dads version. As they say, "it's Americanized." Now I make Calamansi bars (aka, lemon bars) with the ripe ones. Very tart, just the way I like it...😋

    Looks awesome. A Vietnamese buddy of mine suggested if I was going to wok I should get a burner and do it in the garage. 😊.     Our manang in the house makes the best pancit, be it bihon, canton for everyone she remembers having birthday for that day. Pancit for longlife. She then puts pancit in a saucer in the corner for the departed. Surprisingly, days passed and it does not go bad and no ants too.

    I would LOVE to try this with the thick noodle. My best friend growing up was Filipino and his mom made the most incredible pancit with the thin rice style noodle and my mouth still waters thinking about it. One of the best things I've ever had. This looks incredible
