I work in a ravioli shop & we are making a BUNCH of these for Easter this weekend. as I was looking through the channel, I was thinking that the only thing missing was Easter pie...and then I saw the still shot and realized of course he's got that covered as well. I made it by myself for the first time this year after having helped my grandma make this every year until she got sick in 2008.
Holy cow, I never knew other families made these for Easter. We always just called them Easter pizzas, the ones we make are much smaller but it's the same idea.
My mother and I use to make 11 or more every EASTER and send them out to family and some for her family at home those times were the best times baking with mama

My Irish family grew up in an Italian neighborhood where my moms Italian girl friend’s mother taught her many Italian recipes. Easter pizza was one of many. We added hard boiled eggs in the pie. Today my Italian girlfriends have no idea how to make this special pie but I do! LOL

I always helped my grandmother, who came rom Avellino, to make this Easter Pizza. This is going back more than 85 years ago when I was old enough to help. I do not see any pictures, of this treat, that looks like the way we make Pizza Rustica. A special dough just for this pizza only, the ricotta, the eggs, the assorted cheeses including Formaggio Fresco (a specialty found only at Easter time) prosciutto, salami, capocollo were the ingredients. The meats were sliced thin then layered into the crust with the cheese mixture in between. Does anyone make it this way....I still do at 90 years old....I would love to know!
LOVE it... would make it more often, but, to use the good ingredients gets EXPENSIVE. Well worth it around the holidays though. Matter of fact, my sis in law will be serving it on Tuesday, Christmas eve!!!
