    Ingredients:
    For the Idli Batter:
    1 cup Rava (semolina)
    1 cup Yogurt (curd)
    1/2 cup Water (adjust as needed)
    1/2 tsp Baking Soda or Eno Fruit Salt
    Salt to taste
    For the Tadka (Tempering):
    1 tbsp Oil
    1 tsp Mustard Seeds
    1 tsp Cumin Seeds
    1/2 tsp Urad Dal (split black gram)
    1/2 tsp Chana Dal (split Bengal gram)
    A pinch of Hing (asafoetida)
    1-2 Green Chilies, finely chopped
    1 sprig Curry Leaves
    1-inch piece Ginger, finely grated
    1/4 cup Carrot, grated (optional)
    1/4 cup Green Peas (optional)
    2 tbsp Coriander Leaves, chopped
    Instructions:
    Prepare the Batter:
    In a mixing bowl, combine the rava and yogurt. Add water gradually to form a smooth batter.
    Add salt to taste and mix well. Set aside for 15-20 minutes.
    Prepare the Tadka:
    Heat oil in a small pan over medium heat.
    Add mustard seeds and let them splutter.
    Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.
    Add hing, green chilies, curry leaves, and grated ginger. Sauté for a minute.
    Add grated carrot and green peas, if using, and cook for another 2-3 minutes.
    Turn off the heat and add chopped coriander leaves. Mix well.
    Combine Tadka and Batter:
    Add the prepared tadka to the rava batter and mix well.
    Just before steaming, add baking soda or Eno fruit salt to the batter. Mix gently until the batter is light and airy.
    Steam the Idlis:
    Grease idli molds with oil.
    Pour the batter into the molds, filling them up to 3/4 full.
    Steam the idlis in an idli steamer or pressure cooker (without the whistle) for 10-12 minutes or until a toothpick inserted comes out clean.
    Serve:
    Allow the idlis to cool slightly before removing them from the molds.
    Serve hot with coconut chutney, sambar, or any chutney of your choice.
