DELICIOUS VEGAN AUBERGINE DINNER- Turkish Style (Karniyarik)

Hey! Today I'm sharing delicious stuffed aubergines called Karniyarik in Turkish. This is a great vegan, low carb dinner but I also recommend having it with some complex carbs like bulgar wheat. Let me know in the comments below what you think😊
RECIPE
Serves 5
5 aubergines
8 tbsp olive oil
Quorn 200g
1 onions chopped
1 garlic cloves chopped
1 tbsp tomato paste
1 tbsp sun-dried tomato paste
500 ml beef stock
pinch paprika
2 tomato
1 red pepper
1. Stripe the skin of the aubergines with a peeler and trim the greenery
2. Add 3 tbsp of olive oil to a frying pan
3. Add the aubergines to the pan and drizzle 2 tbsp olive oil on top, season with salt and fry with lid for 15 mins until skin is coloured and a bit blistered
4. Add pan to oven for 20 mins 190 c
5. For filling add 2 tbsp olive oil to pan and add the onions and garlic and cook
6. Add the tomato pastes, 1 chopped tomato with 50 ml of the beef stock to reduce sticking
7. Add pinch of paprika and season
8. To prepare the aubergines, put a slit across the aubergine top and put a spoonful of mixture inside the aubergine.
9. Decorate with sliced pepper and half a slice of tomato on top of the mixture
10. Add to a earth pot and add rest of the stock. Boil for 15 mins with lid on
11. Add to the oven for 15 mins
12. Can serve with bulgar wheat or brown rice

If you wanna go properly vegan, there is actually a completely vegan version of this dish called 'imam bayildi' (which literally translates to 'the imam fainted', no idea why lol). Instead of meat the aubergine is stuffed with veggies. Tastes great too, though I do prefer it with meat. I usually dislike aubergine and it can be a tricky vegetable to work with, but in karniyarik the meat goes so well with the aubergine. And karniyarik itself goes very well with rice.
