I prepared two Spain on a Fork recipes with potatoes this week: Spanish Potato Stew (patatas en ajopollo) and Spanish Lentil & Potato Soup. Both were fantastic and now I have another one to try! They're great for cold weather, and I still have a lot of potatoes left over. I also happen to love chickpeas so this one is a no-brainer!
My mom and her family all came here to NY from Sicily in the 1970s, this is the kind of stuff you can always find cooking in the house during the winter.

I like to make a pot of soup or stew every few days and have been wondering what I would make next. I think I've found it. I have all of the ingredients on hand (which is a feature of your recipes that I appreciate) except for the bell pepper (which I detest, so I'll substitute mild green chile peppers). It is going to rain tomorrow (which is as close to bad winter weather as we get), so this will be perfect.
I followed this recipe exactly except I finished with two large handfuls of spinach, wilted, and stirred in when serving. The recipe had such a delicate balance of flavours from the vegetables and spices and it was a revelation. Absolutely awesome . . . .loved it❤️. Thanks so much for this meal it was definitely "above the next level!". no doubt !!!
I made this yesterday, even though I did not have the almonds to make the paste, the entire thing was one of the best flavors I have ever tasted! The tomato sauce alone was out of this world! I did use Rancho Gordo beans that I cooked from scratch rather than the canned. That also made a big difference. Thank you Albert!
Hey - don’t toss the chickpea liquid (aka aquafaba). It is an excellent egg substitute! I save the liquid in an ice try and freeze it. I cube (3 tbs) is one egg.
I love all of your recipes. But can you please show us how to do the breakfast dish using breadcrumbs and bacon fat. I had it once at a friend's and fell in love with something so simple. Many thanks
Would it work if I used canned carrots for this recipe? They're already soft. Should I maybe add them towards the end? Like, in the final couple minutes of simmering? I have all ingredients except bell pepper but I can leave them out. I'm currently snowed in right now so it's hard to get to the store. :/ But a hearty stew sounds good right about now. Any advice appreciated. :)

Why do you bother patting the potatoes dry, when you are going to put them in liquid anyway?

Yes canned carrots will work! I would add them at the same time as the chickpeas, so they can absorb all the flavors :) Stay warm!
