I genuinely feel bad for Barry seeing how much effort and skill he put into that pie as well as doing something else that was never done successfully by anyone at sorted, if his pie was cooked then the brownie point would be his for sure. Either way he deserves a lot of respect after this battle
Just to clarify I don't have anything against Mike and Jamie it's just their lead on the brownie leaderboard, on top of that Barry's food hell will make the studio smell like a sewer. In general the recipes were great and one way or another they made it ultimate (salt baking an entire chicken) (dipping the sandwich in a jus) (a very high skill involved recipe with crispy chicken skin)
Melanie 2 Barry and Mike always make my fav recipes. I want to eat almost everything they make in these battles and Jamie's are just not my cup of tea and I would never it this one, made unhygienic-ally.
After seeing those reactions I knew I had to make that salt bae'd chicken. So last night I tried it and it really was great, juicy chicken. Success! (Tip: cover the baking tray with foil, because getting the crust off was a lot of work, even after a night of soaking.) However, when comparing work/result/costs with my standard method of making baked chicken, it loses, so I probably won't make it again. In case anyone is curious, my usual way of preparing chicken is by coating big chicken legs with some beaten egg, generously sprinkle them with chicken spices, bake on a rack at 180C for 45 min, coat them with egg again and bake for 15 min more. Delicious crispy chicken.
I like the idea of trying the clay encased ones, that still have all the innards in, and feathers on, where all the feathers come off stuck in the clay.
I died when Mike and Barry were trying to explain how the egg was in Jamie's chicken. Jamie just went with what they were saying hahahahaha. Had to watch that twice.

Barry's pie, although under cooked, is something I would order. That looks amazing. That chicken skin looked tasty. I'm still in shock that Jamie's chicken came out so good. Even if I wasn't laughing, I was smiling so hard. This is the worst because Barry deserved better than that uncooked pastry... Jamie's recipe reminds me of a medieval recipe called 'Chicken in the Snow'. I've had it at medieval feasts, and the salt crust makes the meat very tender by holding in the juices. Delicious!!
I also thought that Barry was going to be the winner because that pie was gorgeous. The idea was also great. So so sorry that the pastry wasn't all the way cooked.
Isn't salt-caked chicken a thing in China and Hong Kong? It's quite commonly served in restaurants, but most restaurants substituted the actual salt-caking with MSG...... Jamie, you got my damn vote cuz that looks absolutely delicious. And how does the egg taste... Dice it up and it would be great garnish for the salad, btw.
Salt-baked Chicken is actually a typical / traditional dish in China and Hong Kong and possibly some Asia countries as well. If you have a really good and fresh chicken, this recipe with simple ingredients really brings out the flavour and texture of the meat without adding too much to it.

Poor Barry! He was so rocking out the complex recipe up until the end! Mike's sandwich looks unbelievably delicious, but the award for the most gear jamming has to go to Jamie for this one. Salt baked chicken. I didn't know that was a thing!

I usually can imagine how all the food tastes like because I know the individual flavours.. But damn.. trying to imagine salt baked chicken is somehow too much for my brain to comprehend..
Salt baked is an ancient kind of preserving method, when salt wasn't really used as a seasoning but more for preserving foods for long periods of times. Then when the time was right, the thing would be put whole in an oven, the Salt hardens with the heat, making a hard shell, where the moisture and flavors of the meat, can't escape during the cooking process, returning/staying in the meat. Making it really savory and making sure that the meat is tender, of course when used with white meat like chicken, it looks strange becasue the meat doesn't get any colour, but the flavors are what you're looking for. Thats also a reason why when you use this method with red meat, you first gives the meat a quick sear in the pan to give it color, then cover it in salt and cook it.
Its a chinese cooking method but i think it is getting less common. I can still find old timers selling salt baked chicken in night markets in my country. It basically taste like putting too much salt in your chicken, usually eaten with rice like a chinese dinner
All of these recipes looked delicious, but I think Mike's excited me most. I'm most intrigued by Jamie's, but off of a menu I'd choose the ultimate chicken sandwich. Definitely three of the strongest recipes in a while, simply because they're all a cut above and go beyond the typical great standard of Sorted.

You guys should do a battle where you only have a little bit of money to make a recipe. I'm in college, and it's pretty expensive to go out and buy ingredients. I would love to see a battle with either as few ingredients as possible, or something where you have a small budget.
