Ingredients:
1 (1lb) box pasta, your choice, cooked and drained
3 tablespoons oil
2 zucchini, sliced
1/2 onion, cut in half moons
1 green pepper
2 links kielbasa
5 cloves garlic
1 tablespoon fresh basil, chopped
salt/pepper to taste
1 teaspoon oregano
1 can diced tomatoes
1 cup bread crumbs
1 cup marinara sauce
1 cup mozzarella cheese
Preheat oven to 370°F
Sauté 1 zucchini, onion, pepper, garlic and herbs in oil over medium high heat.
Cook till just beginning to become tender.
Add the kielbasa and tomatoes, stir to combine.
Add the pasta and toss to coat.
Toss the remaining zucchini slices in a small bowl and toss in the marinara sauce and then into the bread crumbs to coat.
Layer over the top of the vegetable mixture evenly.
Place in oven and bake for 15 minutes.
Remove from oven and sprinkle cheese over top and put back in oven till cheese is melted and browned.
