Well demonstrated. I made a batch today. Used apple cider vinegar and brown sugar to give it a little more tang. Appreciated sugar soothing the heat tip.

Facing a hard frost I picked out the hot peppers and got a five gallon bucket-full. While prepping ways to preserve, I found some dried mango on a shelf, I ended up making a test batch using it. The mango adds its flavor and a smoothness to the salsa.

This is a great recipe. I love that your using a old faithful Kitchen-Aid blender. I don't work for them but I always sing their praises over that other way more expensive throw away competition.
Done. Thanks for mentioning this as I’ve been planning on making another hot sauce video, and this go around will show the seasoning process. In the meantime, you essentially take the mash paste and smear it onto wax paper and then put the paper in a dehydrator. Run it for 12 hours or so on a lower setting until it is brittle and, well...dry. Then pulverize with a mortar and pestle or food processor and add a dash of salt to taste. Done and done.
I'm posting the new hot sauce recipe video today but due to time constraints I wasn't happy with the seasoning part, so I'm going to make it again and post it as a standalone short video in a few days. Just wanted to give you the update since you made a request.
Just an FYI - I switched from 5 oz bottles to 3 oz after a TSA agent confiscated a hot sauce I gave a friend when we worked out of town; only 3 oz liquids are allowed.

@@outdoorindoortexan i normally just put the fresh peppers sometimes with some bell peppers depending on how hot I want it in the blender or food processor with a little vinegar, if more mellow a little sugar nothing else and of course keep it in the fridge. My added flavour would be garlic, turmeric, ginger , thyme escallion if I’m thinking that. I’m definitely going to try with some type of fruit next time. Ps never had to think about preservative.
I love the turmeric and thyme idea. Will definitely have to try that for myself. Make sure to check out the recipes on my channel if you’re thinking about fruit options. maxpower10k - That trip, he only had carry-on. If I have 5oz bottles on me, I ask if they checked luggage, and to make sure to pack it. I got 3oz because many gigs are short trips, and many folks do carry on.

Typical Caribbean way of making Hot Sauce. Eliminate the Carrot and Onions for a longer Shelf Life. If you blend long enough the seeds will be crushed that even makes it invisible. Good work. Thanks
I'm curious - why would leaving those two things out increase shelf life? Also, what kind of shelf life can one expect? I'm the only in my family that likes things this hot so it'll take me some time to work through a batch. :)
@@wjcallihan typical shelf life (in fridge) would be 2-3 months if not longer using the recipe in video. BUT that’s more of a rule of thumb as I’ve had bottles taste and be fine well after that. It’s really a matter of ph level, how much vinegar is added. Sub ph of 3.5 or so would be a fairly steady bottle.

A little side note here folks, never ever handle or process hot peppers bare handed! My wife unknowingly discovered this fact after processing a large batch of really hot habanero peppers barehanded. The oil of the peppers soaks into the skin of your hands and burns like you put them in a fire. And even worse is the cure, as the doctor told her to run hot water as hot as she could stand it over her bare hands to dilute and wash out the pepper oil. She was crying before this terrible episode was over. And absolutely never scratch or put your finger in your eye!!
It felt like I was kicked in the D hurt for a while 😂😂😂 I ran out the rest room naked and screaming my wife and brother were like what the heck just happened 😂😂😂😂

Outdoor Indoor Texan Thank you! I will find the recipe from you! Grandkids are always wanting pepper spice on Pizza, eggs, etc.. think I will have them help me! Lots of rubber gloves for pepper cooking. Forgot one year and did not know my hands could burn so badly from peppers.
Wasn’t sure I was going to like this once I finished it because of the roasted flavor. I just used it on some blackened tilapia and it is the best tilapia I’ve ever eaten. Can’t wait to try it on other meats. I will make a batch unroasted to see if I prefer the fresher taste. As it is, this is my new favorite flavor on fish so can’t beat that. 👍

I keep coming back to read the other comments🤣. Thanks for the terrific starting point. Great sauce! Also to give a little back as payment for the inspiration... I found that an air fryer at 400 for 10 minutes does a KILLER job of roasting habaneros, ghosts, and fruit without heating up the entire kitchen or gassing out the family. I subbed roasted mango and pear for sugar. Mostly lime juice to replace the vinegar, splash of apple cider vinegar, Tamari and fish sauce (tiny amounts!) to cut down the sweet. The lime base makes my hybrid version crazy good on everything it touches. I made only a small trial batch, or this would have been in my pickled duck eggs. Still waiting on those to age so I can sample.
Would have to give this recipe a go. Trinidadian pepper sauce though is the best I ever had....and I have had many versions of hot sauce. Their's is " pepper sauce. 🔥🔥

Great video, not so much for me, but my kids will love it. I love the flavor of spicy items, my digestive plumbing, not so much. Question, I've got 4, Pusa Jwala pepper (Indian finger hot pepper) plants in our garden that are loaded with peppers. If I wanted to spice up some Dilly Beans with these, what would be the best way of doing it. Chunked up fresh, dried and just add a pepper or 2, dried and crumbled as pepper flakes? I'm retired and garden and have time on my hands. and my kids are going to love this sauce, but if they get a batch of Spicy Dilly Beans at the same time, and some spicy potato chips, they will be over the moon.
Thanks so much for watching, Mark! Great question. I would opt for the crumbled pepper flakes route. When one of my pepper plants is producing one or two peppers versus a heavy harvest time frame, I typically pack the ransoms in salt as I pick them and after a few weeks of doing that end up with enough to pulverize into a pepper flake seasoning. (You can also use a low heat oven or dehydrator) I would assume the pepper flakes would hold up well longterm in dilly beans versus worrying about fresh peppers bobbing at the top growing mold and causing other possible trouble. Hope this helps and thanks again for stopping by!
is the bamboo skewer to keep the funnel from stopping up? Never seen that done before but I use a skewer when I'm filling ground spice bottles to help when it clogs up!
Haha exactly! It helps keep the flow going, I can give it a stir while it’s flowing or remove to it altogether to make it flow faster, and it keeps my dang funnel from falling off the bottle.
Great video what do you use to get the rest of the pepper sauce out of the blender and also how do you clean the strainer do you use vinegar over a bowl that you rinse the blender out with? Thanks
Thanks for watching! I scrape the sauce out of the blender using a silicon spatula and once that stops working, I'll leave it upside down over a large bowl. For cleaning, I typically fill our deep kitchen sink with soap and water to let everything soak overnight. In the morning I'll drain the water and then gently rinse it off.
Thanks for watching!

Nice trick with the skewer in the funnel - keeps the bottling process neat!🙂
Thanks so much! The best inventions come from necessity 😂
I came here looking for this. Never heard/saw someone do that and was curious. Another gem of a tip from Outdoor Indoor!
I'll be looking to make this with my chocolate habaneros, come summer.
Very nice! I was just looking at getting chocolate habanero seedlings for this season. How do you like them?
Chocolate Habs are my favourite, such a distinct flavour
I’m still waiting to grow some. My usual nursery never got them in this year. 👎
Well demonstrated. I made a batch today. Used apple cider vinegar and brown sugar to give it a little more tang. Appreciated sugar soothing the heat tip.
Thanks for watching, John! That particular sugar tip has been so useful for me in making various sauces and other pepper cooking. I’m so happy to help share the knowledge.
Great sauce! Used it for my last harvest before the cold. Also, the tip for keeping the mash was a delicious boost for my chili!
That’s awesome to hear! Thanks so much for circling back and leaving the kind comment.
Thank you so much for posting this. I used your recipe and mine came out absolutely delicious.
Thanks for watching! I’m so happy to hear you liked it.
Just made it! Instead of sugar I added honey! Thanks for this magnificent recipe!
Happy to help! Thanks for watching and reporting back. Enjoy!
I love Hot Sauce looks delicious. I enjoyed this video. Take care
Thanks so much, Donna!
Good tips, good video. I love making my own sauces, I gotta look into those bottles from Amazon.
Thanks so much! I hope y’all like it.
Great recipe, I have never tried making my own hot sauce before, thank you for a detailed explanation, and suggestion on dehydrating pulp for a spicy seasoning!
Thanks so much for watching! This is a really great building block hot sauce recipe that requires not too many ingredients but has a fantastic overall finished palette. I'd love to hear how yours turns out if you get around to making one! Also, that pepper mash is amazing dehydrated and mixed with a touch of salt. It's a great pop of color when plating too.
Facing a hard frost I picked out the hot peppers and got a five gallon bucket-full.
While prepping ways to preserve, I found some dried mango on a shelf, I ended up making a test batch using it. The mango adds its flavor and a smoothness to the salsa.
That sounds fantastic! Thanks for sharing.
Thanks for the share! I will definitely try this receive out when my peppers have ripened 😁
Karl K happy to share! Let me know how it turns out when you get to it. Make sure and subscribe if you haven’t already. I’ve got a video coming out where I make chili pepper seasoning with the leftover mash that may be of interest to you.
Beautiful!
Thank you!
Love your recipe! Just made this, literally just now finished. It’s so good, my mouth burns though because of all the taste tests. But this is gonna go great on some pizza, lasagna, or tacos 🌮
I added a little bit of mango to replace the sugar. It works!
Great recipe!
Awesome to hear! Also great tweak with the mango! Thanks for watching and leaving the feedback!
I TRY that my ghost scorpion pepper great videos

Well that’s another recipe for me to try grown so many chillis this year Habanero being one of them. Cheers 🍻
Let me know how it turns out and thanks for watching!
Awesome recipe. I made some. Used a different recipe but this will me my next one. By the way. I ordered the bottles with metal cap and w/b my sauces for 30 min. Looking forward to make your recipe. Thanx 👍
That’s great to hear, Marion! Hanks for watching and please let me know how it turns out. Those bottles are perfect for gifting out the sauce with the holidays coming up. 👍🏻
This is a great recipe. I love that your using a old faithful Kitchen-Aid blender. I don't work for them but I always sing their praises over that other way more expensive throw away competition.
Thanks Theresa! That blender has been put through its paces and keeps on ticking.
first time ever making hot sauce. great video, family really like this !
I’m so happy y’all liked it! Thanks for watching and taking the time to leave the comment!
Would love to see how you dehydrate the pulp and make the seasoning.
The dehydrated video is up! Thanks again for the request.
Just an FYI - I switched from 5 oz bottles to 3 oz after a TSA agent confiscated a hot sauce I gave a friend when we worked out of town; only 3 oz liquids are allowed.
Perfect video! Basically the same method i use to make my habanero sauce but i will try baking chillies instead of frying and i will try carrot now. Thankyou!!!
Thanks for checking it out! If you have access to it, try grilling your peppers to add some smoke flavor too. Another great tweak.
Is there any difference if I use red habaneros? Great recipe!
Jorge M. Cucalón there may be the slightest difference in taste but for the most part, no. Thanks for watching, Jorge!
Red habanero’s are twice as hot, sometimes more
@@THeDrKEvO if they’re Caribbean reds, absolutely. Sorry, should have asked what type of reds he was working with. I was focused more on flavor as a question than the heat scale.
Hi I like the way you make you sauce I make sauce also I am using to same bottles I do different fruit flavors I am from the Island of St Kitts But I live In Puerto Rico 40yrs and I am working on my Hot sauce to get moving I do some sales I will try your style adding my flavors thank for sharing

That’s high praise! It’s always in the back of my mind. Thanks so much for watching and leaving the kind words.
Great recipe love hot pepper grows them in pot at home and is always making hot sauce but never made mine that way got to try your way.
Thanks for watching, Nora! Let me know how it turns out. Do y’all usually ferment your sauce, or how do you make it?
There’s always the standby mango habanero of course, but I have a strawberry kiwi one as well as a green apple one. I was really happy with both.
@@outdoorindoortexan sounds wonderful I will definitely try.
I used a little pineapple roasted it in the oven
Nicely done Jay! I bet that tastes fantastic.
Great
Must I put the peppers in the oven.
No you can skip the part if you’d like. Blistering the skin adds a flavor component but skipping it won’t ruin your sauce altogether.
FYI - I switched to 3 oz bottles for my sauces, after a TSA agent took a friend’s hot sauce I gave him when we worked out of town; only 3 oz liquids are allowed.
That’s a really good point. Thanks Mike!
Why wouldn’t he just leave it his luggage. You just cant bring it on as a carry on.
maxpower10k - That trip, he only had carry-on. If I have 5oz bottles on me, I ask if they checked luggage, and to make sure to pack it. I got 3oz because many gigs are short trips, and many folks do carry on.
Fast and easy 👌.....please do a tomatoe chille sauce 🙏
Thanks so much for watching! I'm honestly not familiar with one using tomatoes, but that doesn't mean I can't figure one out! Thanks for the suggestion. I'll kick that around and if a winner comes out of it, you'll see it on my channel.
Typical Caribbean way of making Hot Sauce. Eliminate the Carrot and Onions for a longer Shelf Life. If you blend long enough the seeds will be crushed that even makes it invisible. Good work. Thanks
Thanks for watching!
@@outdoorindoortexan thank you! How do you measure ph level? Is there an instrument one can purchase?
@@wjcallihan there is! Here’s a link to some simple tests on amazon. amzn.to/3mkc3a1

Outdoor Indoor Texan Yep ! 👌
i even grow them and i can't keep enough on hand lmao for real ~ dry powder and sauces they go fast Guess i'am going to have to start a pepper plantation
They go fast! Especially when friends start liking your recipes haha
lmao Yes they do! I love em! i got 1 more harvest . They got 1 month to get rip in / last yr. a freeze came early ! Middle of Oct. That was weird ! We don't get a freeze until the middle of Nov. in East Texas ~ we get a real big cold snap at the last of Oct.
@@426superbee4 I'm nearby, around Houston, and having the same weird weather. All my plants are flush with flowers and I'm praying for no freeze until I can get the peppers off haha Luckily all mine are in pots so if a freeze does show up, I can always drag everything into the garage and baby them until the last peppers are ready.

Amen!
And if you are a guy and have been handling habs without gloves, DO NOT go pee without first washing your hands really well!
@@ghw7192 i learned this in a hard way, worst i was sowing seeds from ghost pepper, i really cant walk because of the intense heat from my D

I grow lots of variety of peppers. Using several kinds in making Salsa. I am going to try your sauces now that I found you here making them! WOW fun! I have canned Salas for many years making as much as 4 cases each season. Lots of work! I am older now and can’t lift the huge pressure canner like in my muscular days. My hubby helps me now but do not make as much. Getting ready to roll now that Romas etc. are finally ripening. We had a rainy June so things were slow to get growing in Idaho. We grew a cayenne pepper and it is huge and full. Can’t wait to see more recipes!

Haha there’s some gems in the comments for sure.
Thanks for the feedback. Air fryer saves the day again! Your version sounds awesome.

xantham gum is magical for stabilizing the sauce.
Yup it’s great for that! It’s an intimidating ingredient for people getting started out in hot sauce making since it’s not something commonly lying around the pantry, so I tend to leave it out of my recipes. Thanks for watching and leaving the comment!
@@outdoorindoortexan I get it. But I think if more people use it and show how to use it, it will become common-place. Especially with online sources now. It is also natural despite the odd name.. I love the recipe thanks for putting it up.

Great video, not so much for me, but my kids will love it. I love the flavor of
spicy items, my digestive plumbing, not so much. Question, I've got 4,
Pusa Jwala pepper (Indian finger hot pepper) plants in our garden that are loaded
with peppers. If I wanted to spice up some Dilly Beans with these, what would be
the best way of doing it. Chunked up fresh, dried and just add a pepper or 2, dried
and crumbled as pepper flakes?
I'm retired and garden and have time on my hands. and my kids are going to love
this sauce, but if they get a batch of Spicy Dilly Beans at the same time, and some
spicy potato chips, they will be over the moon.
Thanks for sharing
And thank you for watching!
