There's a pasta made with bacon called "pasta amatriciana" where bacon is the key flavor component. You're not crazy for wanting to add bacon! (but sausage would be my ultimate vote!) love you guys!

Kamp’s smaller than I thought! No piggy backing with Lexie, our black Lab... Slot canyons make me nervous - glad you didn’t feel claustrophobic. Oh my - riding in the Scamp! Jim used to move our Scamp by hand and have me (and big dog) sit on the bed for ballast - THAT was scary enough 😂

My vote ( do I get a vote?) is that you head to the Eastern Sierra. It’s epically beautiful against those mountains, and you are in valleys low enough to be below the snow, full of BLM camping options and undeveloped hot springs ( you can see them steaming off the valley floor in the mornings). Bridgeport to Bishop along 395 is a lifetime of exploring/ hiking, etc, but north of Bridgeport to Reno Nv is gorgeous too. Happy Scamping!
Ps., also there are amazing hotspots in western Utah and throughout Nevada.

Crazy but one reason I dig you guys is that you are so health conscious without being vegan. Real food, healthy food. So great. Though I'd skip the pasta and just have the bacon and sausage from a local farmer and mix with greens and mushrooms :)

Such a cool place and so beautiful. Kamp is a sweet pup. My dream pasta would have onions & mushrooms no meat, vegan. Put the nutrional yeast on top of pasta it's great.
Thanks for the suggestion - been doing a lot of veggie and vegan since my husband had a stroke in September and I must say after a couple of months we were a lot fitter!
I fell in love with Utah the very first time I drove through on a family road trip. And that was just what you can see from interstates! I’d love to spend a few weeks there sometime! Enjoy, and keep each other safe!
You guys should consider moving to Tennessee or North Carolina! The Great Smoky Mountains are diverse, so you guys could stay in the warmth or the cold and still have plenty of activities to do. It’s just something to think about 🤷♀️ I love you guys and am fascinated by the way you live! Keep doin what you’re doin!

After a long day driving in N.M. to Carlsbad Cavern and back to Alamogordo, the BEST thing! Your new video. I love how you are totally able to put your college degree to use. Awesome. Plan. My DHand I are camping from MX to Boston this month. I want to know where we’ll be the day after tomorrow. But then we stop at a park or museum or restaurant and I have to see what’s next. The next right thing. Keep up these great videos. Oh! And the slot canyons - incredible!

A good salad dressing I put together is small amount of honey mustard, splash of lemon juice, pinch of salt and pepper. Sometimes touch of basil or oregano. Very light and tasty.
So funny Elsa riding in the back of the camper as it was going to a new spot. I have done this in my 19’ Jayco and it is a crazy ride!

Probably so used to being limited to how long you can stay in one spot. I really enjoy the occasional extended stay, they can be rare. Funny, today, I've already eaten leftover pasta with tomato sauce, mushrooms, onions, green peppers, and sausage. I eat a LOT of pasta, great energy food.

Bacon in spinach salads is actually really popular in a lot of restaurants!! Bacon with brussel sprouts is even more popular. The flavors compliment each other, bitter and fat. That is why the polish serve sauerkraut with kielbasa! Which you have to try if you haven't!! Super good!

Dang. The thunder clouds. I took that exact same picture on our hike back from delicate arch. They call it "slick rock" and I had this fear that once it started raining I would slide right down the cliff side so I was double timing it. I told my self wait, it's not raining yet, and took ten seconds to stop and grab a shot and then got moving.
Kamp was smart and rode with Daddy! 🤣😂🤣

Late to this party, maybe you've already moved, but some places in western CO with more mild weather right now: Grand Mesa, the Flat Tops are usually fully thawed in May, & of course Paonia. We spent a couple weeks near Paonia last summer on a friend's hemp farm, that is a cool little town!!
