1kg (2.2lb) beef
1 pineapple
3 stalks lemongrass
1 small onion
120ml (1/2 cup) rice/wine vinegar 5%
1 tsp salt
1 tbsp sugar
1 tsp chicken stock (optional)
1 cucumber
1 plantain ( or Vietnamese green banana "chuoi chat" - optional)
1 green star fruit (optional)
Fresh herbs: mint, perilla, lettuce etc.

I think the green banana we eat raw in VN (chuoi chat) is for certain kinds of banana only, not all kinds. The tartness of green banana adds to the flavour complexity of the roll.

I'm very picky when it comes to mam nem, I always hand-carried a few bottles from a local market (cho Han) in Danang everytime I visit home. Sorry that my answer doesn't help.

Helen..I love watching your videos and making them is even better..yummy. I'm not fond of bottled anchovy sauces. For the anchovy dipping fish sauce..can you tell me what brand or manufacturer its from. I would prefer to use the brand that you're using. A snap shot of the bottle would work out even better...please. Thank you for all the time you put into teaching us on Vietnamese cuisine! P.s..I am located in the US

Mình rất thích cách chỉ dẫn của huyền,rất dễ hiểu,nhưng mình mong cách thức bạn có thể ghi thêm bằng tiếng việt..như vậy sẽ giúp cho những bà nội trợ có nhiều món ngon ko chỉ ở xa quê mà ngay trong nc, cảm ơn tài năng trẻ rất nhiều ^^

Hello ! Chuoi co phan bi hu den ma vo nay van thai va de luon ghe qua . Thit bo thi sat vun vat qua kg co gi dac sac
anchovy dipping sauce : 1.anchovy sauce
2. 1 or 2 tps of sugar - depend on the amount of anchovy sauce
3. a mixing of pinapple is cut into small piece and a lil bit garlic (cut it into small piece also),cook it pinapple and garlic into a pan with a lil bit oil about 2 min ( until it smell good)
-------> mix 1 & 2 & 3 : good sauce is not too salty,not too sweet ,we always add some chili into sauce

there is no reason to " T_T" about sitting on the floor, eating vietnamese food and sitting on the floor is the best, especially any kind of floor and involve rolling stuff with Rice paper :)
