What an amazing breading recipe that you created!! I made chicken thighs tonight with it and they were delicious! Thank you so much for all of your spot on creations!!
Just a suggestion but I am sure you can add your crumbs to a Ziploc bag and mix it that way. My grandmother did it this way with conventional flour and saved her flour and placed the Ziploc bag with flour in the freezer to prevent any contamination etc. I am sure since you stated these crumbs freeze well if you premake your tenders it seems as though the crumbs would stay well in the freezer. That way, you can always have the "flour" (carnivore panko) mixture already made up while not having to create any waste 💕. Hope this makes sense. That way you can add all of the chicken tenders in the bag, shake it up all at once. Cook your chicken and then pop that same Ziploc bag right bag in the freezer for another day.

Made this last night and it was so good. I do mine like Alton Brown. I have a cooling rack inside a cookie sheet for the battered chicken and the same for the ones coming out of the fry pan. I marinate in pickle juice, drain and pat dry. Then dip in wet, coat in crumbs, pressing the coating into the chicken, then put on the rack in the first cookie sheet. When all the chicken is breaded, I heat my bacon grease, fry and offload onto the second cookie sheet with a rack, which is keeping warm in a 250 degree oven. I added some Redmonds seasoned salt and lots of black peper to the breading mix. Served with G Hughes sweet and spicy bbq sauce.
Dearest Nili....I just made country fried steak with your breading recipe and it is so delicious and tender you would never know the difference from the traditional recipe...I even made a quick pan sauce...drained off the excess oil....scraped up the crummies from the pan threw in some onion....a few mushrooms and two tablespoons of cream....Im telling you I feel like a gourmet cook and keeping ketovore all thanks to you and your recipes.....please put them all in a book....I would buy it....GOD bless❤💐❤
Indigo all I can say is holy cow!! I used this to fry up some soft shell crabs, shrimp and cod. Light and crispy. It didn’t soak up any oil. I like this better than non keto. I can’t say enough about it. Thank you for your wonderful discovery! Seriously life changing. Keep up the great work.

Who would of thought adding egg white powder and gelatin to pork ring crumbs would make such an awesome breading for my fried chicken! I honestly feel it is the egg white powder fusing to the meat with the egg wash that helps keep it all together. In any case, this recipe is a definite game changer for sure!
OMG - I coated chicken wings in this and cooked them in the air fryer last night. They were AMAZING! Tasted like regular fried chicken wings you'd get at Popeye's or someplace. I felt like I was cheating! LOL. I dry brine my wings (salt, pepper and garlic powder) for 8-12 hours in the fridge before I usually cook them in the air fryer, so they were flavored perfectly with the breading on them. I'm going to try seasoning some boneless skin on chicken thighs with Cajun seasonings (spicy fried chicken anyone?) and then breading them with this. I can't wait to see how they turn out. I'm also going to see if the pork rinds, egg white powder and gelatin can act as a bread crumb replacement in meatballs and meatloaf. I'll let you know how it turns out. Wow. Wow. Wow. I made your coating mix, coated some pork loin chops and shallow-fried them. OMG! This is the best coating for fried anything I have ever made and I've been cooking for over 50 years! Thank you so much for your creative exploration of healthier foods!!!
I did it! I used my leftover ribeye steak that was cooked medium. Cut into steak finger size. Coated the pieces in egg (I forgot to use the cream), then coated the fingers in your wonderful coating mix. I added my own home made ranch dressing mix for seasoning. Deep fried until the coating turned golden and crispy. I presented my daughter who is a very picky non-keto eater with a sample. Her eyes opened wide with delight. So I offered to split my serving with her . She accepted heartily! Thank you for all of your amazing R&D.
THANK YOU!!! In over 20 years of doing low carb, keto and carnivore (sometimes off and on in the earlier years) I never found a breading recipe that was this good. What I always used was half ground pork rinds and half parmesan cheese and was very happy with that but this blows that out of the water, SERIOUSLY! I did fry them in bacon grease too. I used boneless skinless chicken thighs because I already had some defrosted. I dare say that made them even better! I have never made chicken fingers with anything but breasts and this was perfectly juicy and chicken-y flavorful!
Had something similar for supper last night. My recipe uses whey isolate (now egg white) protein and I do add spices (paprika, garlic, pepper) and I dip in egg only then fry in bacon grease…yummy. I make my own crumbs with plain pork rinds ground in my nutribullet

Yum, I'm definitely going to try this. I liked Porking Good crumbs but they were too expensive for me to use regularly. So I get plain pork rinds from Aldi and blitz them in my food processor. I keep a large container on hand at all times. My husband even uses them for his fish fillets.

This is amazing. In my pre-LC/Keto days, I used to just bread chicken in flour and pan fry. It made the most amazing drippings that were almost as good as the chicken itself. I made this last night for dinner and it's definitely the closest I've come to duplicating it since giving up grains. (I did pan fry it.) It has a bit of a chewy texture and sticks to the chicken (or whatever you want) as well as white flour. I will be using this as a breading for other things as well. I found Parmesan crumbs by whisps. Found at my grocery outlet. Used in my meatballs. Pretty good. I might try them for breading. Will also try Nili’s recipe.
Nice idea I guess, but in my 2 years of frying with pork rind crumbs, I have never needed to add gelatin and egg whites to it. It’s perfect on its own.
This is fabulous! I use my egg white bread crumbs and pork rinds similarly with this same result, however, this is much easier if I don't have the egg white bread crumbs prepared.❤️❤️

Next Level technique tip: I made up a big batch of this breading without seasoning. I stored it in the now empty Pork Panko container from Walmart - it has a shaker top. Hubs put his preferred seasoning in the egg mixture (Tony Chachere's Creole seasoning!) then used the Panko container to sprinkle a light layer in the breading dish, added pork chops (yep it was wonderful for this!) and then sprinkled just the right amount over the top - much less "waste" from trying to estimate how much you need for frying batch. Just a note: The Reuteri yogurt was a strange thing, if not a disaster. Still trying to figure out what to do with it. It fermented for sure. Came out 1/3 whey, 1/3 possible "yogurt" and 1/3 cream fluff that looks like partially-churned butter.....still don't know what to do with it? This a lot of $$$, how can I throw it away? 2. How about making a breading from very, very crisp dryish bacon? That sounds like it might be fantastically tasty???????????

Ok, I’m sold that the batter or dredge has good adherence. It also looks like the burn rate is slower than most keto dredges…is this correct? I mean most of these keto batters, mixes, coatings and dredges have been so disappointing because they burn too fast and your meat doesn’t get a chance to cook through.
question: if you bread it and freeze it for another night... can you put it in air fryer or deep frying from frozen? if so, does temp&timing change? to what? or do you have to take frozen pc's and spread out on a pan to thaw first? ty 4 the help!
I'm glad you found a breading that actually sticks to the food. But, my favorite form of frying is beer battered. Do you think it could work if you tweaked your recipe a little for a wet batter to work?
This is for me. My husband likes a Latin type of breaded fried steak and loves fried fish. I would love fish tacos on egg life wraps...this looks great. I have used pork rind crumb with unflavored protein powder that worked okay but this looks fantastic.

I’m a 72 year old retiree who lives on a very tight budget. I can’t afford to buy egg protein powder but I do have some vital wheat gluten in my freezer from my bread making days. Do you think I could sub the gluten for the egg white powder in the chicken breading?

Is anyone worried about the oil that Pork rinds are cooked in? It can be a problem. I haven’t found a good clean Pork Rind crumb here in Australia… most are cooked in Canola oil… dah!

Ok, I’m sold that the batter or dredge has good adherence. It also looks like the burn rate is slower than most keto dredges…is this correct? I mean most of these keto batters, mixes, coatings and dredges have been so disappointing because they burn too fast and your meat doesn’t get a chance to cook through.
question: if you bread it and freeze it for another night... can you put it in air fryer or deep frying from frozen? if so, does temp&timing change? to what? or do you have to take frozen pc's and spread out on a pan to thaw first? ty 4 the help!

This is for me. My husband likes a Latin type of breaded fried steak and loves fried fish. I would love fish tacos on egg life wraps...this looks great. I have used pork rind crumb with unflavored protein powder that worked okay but this looks fantastic.
