Here is the full guide on installing a custom firmware to your PS3 that’s running 4.91 official firmware or lower! The new PS3 toolset has been released today meaning it is now possible to jailbreak your 4.91 console to a full CFW!

Get as far as the Flash Memory section, then click Load Patch via HTTP, then nothing happens, it just says Establishing Server Connection and stays like that, doesn’t connect to any server.

N00b.
Im on OFW 4.88 slim 2003A.
If I jb to evilnat 4.91 from here, will I miss out anything important from OFW 4.89 & 4.90 or will the jump from OFW 4.88 to CFW 4.91 include all the OFW updates I've missed.
Does that make sense?

There weren't any real updates in 4.89 and 4.90, those were annual "security" updates by Sony. Just update to 4.91 OFW and go to 4.91 Evilnat. You have to be able to go online to jailbreak anyways.

Boot ps3 in safe mode, connect a USB with OFW 4.91 update on it. Select the last option on the safe mode menu, let it run.
Then follow this tutorial to reinstall CFW to your ps3
