I'm now in my 70's and I have so many amazing memories that to this day have no idea what they cost me and I regard them as priceless. The best Art is never going to be cheap. Yes the price tag looks high. And a couple of years ago i would have said its foolish. However having the opportunity to get this of your bucket list is fantadtic. I started doing the same about a year ago. I'm not in good health and been made aware of how precious life is, and that we are not guaranteed to be here forever. So now I do not skimp on food anymore. I go for higher quality items where im interested in. I have eating a porterhouse steak on my bucket list, which I will have for my birtday dinner soon. I usually get cheaper cuts. But im intrigued and will try it. Looking forward to another great video. Been enjoying watching your videos. I appreciate your mild demeanor and soothing voice. It's a joy to watch your videos.

James, because of you, and my girlfriend, I finally went to restaurant that cost me around $250.00 called Costera located here in New Orleans. It was by far, the finest meal I ever had. I never thought a beet salad could be so good with mild blue cheese, candied pecans, and sprinkles of mint leaves. I never thought I was going to enjoy a meal so much but my eyes have been opened to fine dining. While I enjoy all your reviews, I must say... this is the first time I've been astonished by the level of service and accommodations a restaurant bestows upon its patrons. I will have to re-watch this review several times.

Agreed. I've dined in dozens of Michelin starred restaurants (admittedly mostly 1 and 2 star), but Per Se is my favorite. The Oysters and Pearls course is the best thing I've ever tasted in any restaurant.

Being a true foodie and retired chef, great food often makes me feel like crying. Especially when I create something special for my grown up kids, and their faces and comments of surprise are memorable.
I’ve gotten obsessed with cooking in the last couple of years and it’s soooo rewarding when you spend a lot of time making something and the group of people you serve it to loves it and raves about it. It’s a legit drug-like high.

I’ve always had a hard time explaining to people that I love to go out to eat by myself, but finally someone understands! When you do stuff by yourself, you don’t have to worry about the other person, not liking some thing or whether or not they are having a good time or whatever. You can just focus on the experience. Congrats on living your best life and trying things you always wanted to try! 🎉

I always kinda cringed at the phrase "YOLO" but if ever that phrase was fitting it would be spending over $500 for a single meal. But given I spent more than that at the French Laundry, I can understand. I need to get back to NYC to try Per Se. If it's anything close to the French Laundry, that would be money well spent. My wife and I were fortunate to be able to dine at both and for what it's worth, she enjoyed Per Se and I enjoyed TFL. Both were as close to perfection as you can get, very similar experiences, but there were a few more bold dishes she enjoyed at Per Se and I enjoyed the more soft/rich dishes we had at The French Laundry. Still hoping to go back!

You're right, you'll never forget that experience no matter how much it cost, and you know that it was totally worth it. I got to have that experience years ago at Le Bec-Fin in Philadelphia a few times, so when I see the newer generation finding that excitement today like I did back then, it's really cool...
Just a fine dining etiquette I learned - with bread/butter, you put the butter on the bread plate, tear a bite size piece of bread and then smear on the butter.
That is absolutely true, whenever you are dining with other people. But this is not a faux pas when dining solo. There is usually one butter that all guests at a table share... but if one is dining alone, perfectly acceptable to take butter from the butter plate or receptacle. Etiquette rules are about polite behavior in social situations...I don't think dining alone is a social situation in that regard.
I'm literally in emo tears about this beautiful experience. To all those who can REALLY appreciate the drive thru, the diners, and the decent to great home cook, and this next level of dining experience, you know who you are, and I'd love to cook for you. That was a wonderful review of an incredible restaurant and experience! I felt so elated just watching you having your dream come true to such perfection. You are so eloquent in describing your meal and the service. I have had several memorable meal experiences in my life and it's true, you will never forget them and the way that they made you feel so special. The whole experience from start to finish, from service to tableware was incredible, rich and satisfying. They were so generous too, giving you enough red wine for the lamb course, allowing you to tour the kitchen and the goodie bag of chocolates. Superb in every way.

Such a wonderful adventure, James. While I have yet to dine at Per Se, good friends, as two couples attended that restaurant a while back. Since the two husbands had deep pockets, they added a few bottles of excellent wine to their dinner and the total bill for the four of them was at $3,600...yikes. Interestingly, one of the wives mentioned that she was allergic to chocolate, assuming only her other three dinner guests heard her. Wildly, when it came to dessert time, she was not served anything chocolatey and instead received outstanding cookies...which she adored. Even her departing gift bag was free of chocolate-containing things, which she immensely appreciated. How did the kitchen know? Maybe they have microphones under each table...lol. Like you, they thought everything about their meal, and the service, was top-notch. Thanks for creating this experience. Ciao.

So you know I was waiting for this review! First off, TFL is on my bucket list. Per Se is the closest I've gotten. Per Se was about 7 years ago for me, and I can still remember every bite! I can say your explanation of the experience will trump anything I could come up with. You have a fantastic way to present your experience, and it is incredible to re-live the experience through your videos. Keller is just amazing in his craft. Even Bouchon Bakery in The Rock is excellent. I know you just were at The Modern, but if you have the opportunity to do their kitchen table, it is well worth it. Thank you as always for a wonderful review, and taking out a second mortgage for this one!

That's definitely expensive but man a 3 star NYC restaurant by Keller? That's worth it. Amazing service, which included a $41 glass of champagne and a smaller glass of red to pair with your meat? And a custom menu plus gift bag with desserts to go? And kitchen tour? Man, they know how to pamper guests.
This is one of the better fine dining videos I've seen. It's less about "being seen" and more about the overall experience and your opinion of it. As a chef, I want to thank you for taking the perspective you did.

@@Jamesnu My former roommate and now best friend is a chef. She stashed at EMP and worked at both Le Bernardin and Per Se. I too worked in restaurants my whole life. There's a lot of sleight of hand and smoke and mirrors in the restaurant industry that consumers don't see. I love great food too but I'd rather cook a great home cooked meal. With that said, Per Se is legit.

Thanks for taking us along on this experience. I've only gotten to eat at true fine dining restaurants a few times and it's always been worth it. Even at the most formal one we were made to feel at ease right from the start. One word of advice for those planning to go to such a restaurant for the first time. If you order a full wine pairing, don't expect or try to finish every glass served. It can be hard to not when it's as good as the food, but you want to remember the evening fondly for the experience, not the horrible hangover the next day.

I am so, so glad you bit the bullet and made this reservation for Per Se, James. I missed out on going to El Bulli before it closed. I was fourth from the top on the wait list for a one-night-only meal by Michel Gras and David Chang at WD-50. No one cancelled. I didn’t make it in. The only reason I got to dine at the original Momofuku Ko was because I was working for the company at the time. I once directed my entire career in anticipation of legendary Chicago chef Charlie Trotter opening a restaurant in New York. He passed away. I am planning to go to Alinea for my birthday and my hometown of Chicago…. In September 2025. Who knows what will happen between now and then? Restaurants, like people, face their own mortality. Even an era is finite. Thank you for seizing the day and being rewarded with a memory. Thank you for sharing.

I’ve always had a hard time explaining to people that I love to go out to eat by myself, but finally someone understands! When you do stuff by yourself, you don’t have to worry about the other person, not liking some thing or whether or not they are having a good time or whatever. You can just focus on the experience.

I always kinda cringed at the phrase "YOLO" but if ever that phrase was fitting it would be spending over $500 for a single meal. But given I spent more than that at the French Laundry, I can understand. I need to get back to NYC to try Per Se. If it's anything close to the French Laundry, that would be money well spent. My wife and I were fortunate to be able to dine at both and for what it's worth, she enjoyed Per Se and I enjoyed TFL. Both were as close to perfection as you can get, very similar experiences, but there were a few more bold dishes she enjoyed at Per Se and I enjoyed the more soft/rich dishes we had at The French Laundry. Still hoping to go back!

You're right, you'll never forget that experience no matter how much it cost, and you know that it was totally worth it. I got to have that experience years ago at Le Bec-Fin in Philadelphia a few times, so when I see the newer generation finding that excitement today like I did back then, it's really cool...

Just a fine dining etiquette I learned - with bread/butter, you put the butter on the bread plate, tear a bite size piece of bread and then smear on the butter.

That is absolutely true, whenever you are dining with other people. But this is not a faux pas when dining solo. There is usually one butter that all guests at a table share... but if one is dining alone, perfectly acceptable to take butter from the butter plate or receptacle. Etiquette rules are about polite behavior in social situations...I don't think dining alone is a social situation in that regard.

That was a wonderful review of an incredible restaurant and experience! I felt so elated just watching you having your dream come true to such perfection. You are so eloquent in describing your meal and the service. I have had several memorable meal experiences in my life and it's true, you will never forget them and the way that they made you feel so special. The whole experience from start to finish, from service to tableware was incredible, rich and satisfying. They were so generous too, giving you enough red wine for the lamb course, allowing you to tour the kitchen and the goodie bag of chocolates. Superb in every way.

Food is truly my main passion and I'm grateful for all the culinary experiences that I've had from the casual to the decadent.
Such a wonderful adventure, James. While I have yet to dine at Per Se, good friends, as two couples attended that restaurant a while back. Since the two husbands had deep pockets, they added a few bottles of excellent wine to their dinner and the total bill for the four of them was at $3,600...yikes. Interestingly, one of the wives mentioned that she was allergic to chocolate, assuming only her other three dinner guests heard her. Wildly, when it came to dessert time, she was not served anything chocolatey and instead received outstanding cookies...which she adored. Even her departing gift bag was free of chocolate-containing things, which she immensely appreciated. How did the kitchen know? Maybe they have microphones under each table...lol. Like you, they thought everything about their meal, and the service, was top-notch. Thanks for creating this experience. Ciao.

So you know I was waiting for this review! First off, TFL is on my bucket list. Per Se is the closest I've gotten. Per Se was about 7 years ago for me, and I can still remember every bite! I can say your explanation of the experience will trump anything I could come up with. You have a fantastic way to present your experience, and it is incredible to re-live the experience through your videos. Keller is just amazing in his craft. Even Bouchon Bakery in The Rock is excellent. I know you just were at The Modern, but if you have the opportunity to do their kitchen table, it is well worth it. Thank you as always for a wonderful review, and taking out a second mortgage for this one!

Per Se is fantastic. I’ve been there around 10 times. Of all the parts of the meal, the Animal Farm butter lives in my brain rent-free.

That's definitely expensive but man a 3 star NYC restaurant by Keller? That's worth it. Amazing service, which included a $41 glass of champagne and a smaller glass of red to pair with your meat? And a custom menu plus gift bag with desserts to go? And kitchen tour? Man, they know how to pamper guests.
Yeah, it was costly, but it was for an amazing experience that I'll never forget.
This is one of the better fine dining videos I've seen. It's less about "being seen" and more about the overall experience and your opinion of it. As a chef, I want to thank you for taking the perspective you did.

@@Jamesnu I've had food like this and I'm not kidding, I went straight to McDonald's afterwards. It's a splurge but there's no way 1 scallop will fill a normal man. Aside from the dessert it was a mouse's meal.
First post of your's I've seen and well, well done indeed! Kudos to the restaurant owner and staff and having a small restaurant background it was wonderful that staff didn't seem uber stressed out. @@Jamesnu My former roommate and now best friend is a chef. She stashed at EMP and worked at both Le Bernardin and Per Se. I too worked in restaurants my whole life. There's a lot of sleight of hand and smoke and mirrors in the restaurant industry that consumers don't see. I love great food too but I'd rather cook a great home cooked meal. With that said, Per Se is legit.

Thanks for taking us along on this experience. I've only gotten to eat at true fine dining restaurants a few times and it's always been worth it. Even at the most formal one we were made to feel at ease right from the start. One word of advice for those planning to go to such a restaurant for the first time. If you order a full wine pairing, don't expect or try to finish every glass served. It can be hard to not when it's as good as the food, but you want to remember the evening fondly for the experience, not the horrible hangover the next day.

I missed out on going to El Bulli before it closed.
I was fourth from the top on the wait list for a one-night-only meal by Michel Gras and David Chang at WD-50. No one cancelled. I didn’t make it in.
The only reason I got to dine at the original Momofuku Ko was because I was working for the company at the time.
I once directed my entire career in anticipation of legendary Chicago chef Charlie Trotter opening a restaurant in New York. He passed away.
I am planning to go to Alinea for my birthday and my hometown of Chicago…. In September 2025. Who knows what will happen between now and then?
Restaurants, like people, face their own mortality. Even an era is finite.
