The Barbacoa Queen of Los Angeles | Street Food Icons
Вставка
- Опубліковано 17 лют 2021
- Petra Zavaleta is the chef behind Barbakush, a street food operation that serves traditional lamb barbacoa in Los Angeles, by way of Puebla, Mexico. Petra, her husband, and her sons work together to create their lamb barbacoa, which is a true labor of love. They break down an entire lamb and build a traditional underground barbecue oven in their backyard. They serve their barbacoa on hand-made tortillas, and use every part of the lamb to create more dishes like consommé and lamb menudo. Petra, who learned this ancient method of butchering and barbecuing from her childhood in Puebla, is driven to succeed by doing things her own way. The goal of Barbakush is to bring this Poblano method of cooking to new horizons in LA.

"We dont kill an animal and just use some parts of it, its a waste of life".
This is wisdom, my respect to you and your family.
Hell yeah! I don’t know anyone other that hunters who do that, including myself. Takes a lot to kill and then take an entire day to butcher and process an entire animal.

Yes! We’re so picky in the United States. Only eating certain parts of certain animals. You don’t have that privilege in other countries.
@@vitaly6312 that's a good way to hunt. Unfortunately a lot of hunters where i live hunt for animals like deer and only take the head or antlers for a trophy and dump the body on the side of the road

She always stressed the importance of respecting the animals sacrifice to feed us. We didn’t waste anything. This wonderful woman reminds me of her when she talks. They probably get to eat some of it haha
I've lived in Latino neighborhoods for most of my life, there is an unspoken rule of live and let live. Everyone is kind of just doing their own thing, not worrying about their neighbor, and like others mention, they are probably getting some amazing barbacoa and bringing over some of whatever they have to share as well.

@Johnnie Boi Because a lot of cultures suck. America wants the best. Not the shit from other countries that no one cares about. LA has become a shithole from people just coming here and starting businesses and not paying taxes etc.
