I go to Mexico every year for 4 moths out of the year. Been going for 15 years straight. I have never seen the cartel. They’ve never done anything to me or anyone I know. Stop being a sheep.     I was doing training at a truck plant near Saltillo, Mexico a few years ago and one of the engineers brought in some steaming hot barbacoa fresh from the pit with some homemade pico de gallo homemade tortillas and Mexican Coke (the soda). Best breakfast ever.

    My in laws still do this often (in their back yards) with goats, sheep, beef, and pig. So delicious!!!! They have the best family get-togethers!
    And I love Mexico! Super friendly country with delicious cuisine and breath taking scenery. 😘

    I love how the chef handles the whole preparation of the lamb like a ritual. He plays music, the way the lay the meat, how they remove it, sprinkling the salt, the way he is eager to share pieces of each section he pulls out. The way he enjoys every meal and waits patiently for a reaction. I would love to meet him, try his food and to just be in his presence so his happiness can rub off on me. ❤️❤️❤️❤️❤️❤️❤️

    Barbacoa is my favorite Mexican dish. Glad you can expose the authentic Mexican Cuisine. Also that Agua Dulce(Magay Drink) gets fermented and turned into an alcoholic drink called Pulque.

    _The_ tortilla technique is to split the stack and flip it. The perfectly warm middle of the stack are now on top and easy to access while the colder tortillas are in the middle being warmed again.

    I love barbacoa! Haven't been in my hometown since my family moved to California in 2005 . This video reminded me of all the hard work it goes into the process of that delicious unique barbacoa .     I bet that barbacoa is excellent! No matter what one thinks about slaughtering animals, I have no doubt the owner loves and treats them well. Playing music to them so they stay calm, the different foods they are fed, the way they are slaughtered.

    You should come to New Zealand 🇳🇿 we have a similar way of cooking it's called a Hangi we put volcanic rocks on top of Manuka wood and heated until the rock's are white hot covered with hemp sacks under the ground various meats vegetables and stuffing you won't be disappointed mate 😉 viewer from New Zealand

    My Airbnb in cdmx was a block away from el hidalgüense. My biggest regret was going there only once. Love the barbacoa and the escamoles!

    The same or similar cooking earth oven method in the South Pacific islands. In Fiji for example, it’s called lovo. It can be very dangerous so the older men who have more experience would watch it and teach the younger ones so accidents don’t happen. Earth oven food is so gooddddd 🥰

    This hands down is one of if not my favorite UA-cam. I used to love watching travel channel as a kid and would watch Andrew Zimmerman bizarre food and Anthony Bourdian no reservation. This shows feel just as good if not even better in certain part. Really enjoy your channel and content. Keep it up bro

    Epazote is a plant known for making beans more tender and reducing the gas they give you, that is also used in a lot of other Mexican dishes. Great stuff, I grow it in my garden, and I'm telling everyone what it is because you keep mentioning it but not what it is.

      My mom use to used Epasote in a few dishes.
      Frijoles de la Hoya (Whole beans not refried)
      (Caldo de pollo) ufff tasted like heaven!!! Nothing but good memories from the 80's as a kid.

      @@juvenciosantos9851 I got some seeds for Epasote last year and the seed company sent me like a gram of seeds which means thousands since they are the size of grains of sand. I thought the plants would die in the severe cold spell we are having in California, it's been like 40f, but no, I've still got epasote but it has turned purple in the cold, like pot does when it gets cold, but the plant is still alive. Several of my neighbors now either eat it or grow it, because when it was a giant bush over the summer I started trying to give it away to my neighbors, and when they didn't know what it was I told them to look it up on Google or Wikipedia. Cool plant, that makes undercooked beans not give you gas and fails to die when it's 40F outside and hailing.

      @@wetguavass Beans, beans, a wonderful fruit; the more you eat, the more you toot! Why not post your comment on Beano's UA-cam channel, because if beans didn't give people gas, Beano wouldn't have been invented and epazote might not have been cultivated.
