Many years ago, I worked with a physician from Central America. He was familiar with the Chinese Filipino foods like lumpia and pancit because that was the Filipino food the Filipino nurses would bring for potluck lunches during the holidays. So one day, he found a Filipino restaurant in the next town. According to him, he recognized the Filipino food he knew likw pancit, but he also saw food that looked like his country's food. So he ordered some of it along with the Chinese Filipino food. I grew up never trying or knowing anything about Filipino food or it’s culture. It wasn’t until my late 20’s that I worked in a hospital as a cook for the patients and nurses. I remember the day the nurses shared Filipino food and I was blown away on what I was missing out in life. That kindness of sharing a meal and how delicious it was changed my life, I ended up buying a plane ticket to the Philippines. I never traveled overseas until that trip. I loved learning how to cook Filipino dishes and slowly trying to learn Tagalog, my favorite dish afritada.
