BBQ Brisket Nachos: (Craft Beer Cheese Sauce Recipe) Roasted Jalapeños

  • BBQ Brisket Nachos is about the best gameday or tailgate food you can find. What I like about it is you can make a big ol heaping plate of them and folks can just help themselves. Rarely do you find someone that does not like nachos as long as you stick with just the essentials.
    Today Im going to show you how to make a beer cheese sauce using local craft beer this cheese sauce is not only good on the nachos but anything else you would use a cheese sauce on. The first thing that comes to my mind is pretzels. The other thing that I think that takes these BBQ Brisket nachos over the top is the roasted jalapeños. BBQ Brisket Nachos is great use for leftover brisket.
    Recipe Beer Cheese Sauce
    16 oz of mexican blend grated cheese
    8 ozs of cream cheese
    12 oz of beer
    2 oz of the rub
    Combine all ingredients and cook over medium high heat until all cheese is melted and homogenous
    To bring Brisket back up make a wake up sauce of 50% water and 50% BBQ sauce. I am using GQue BBQ hottish and put on grill over medium heat until it is warm be very careful not to cook the brisket or you risk drying it out.
    Build your nachos as you like em in this video we used - roasted Jalapeños that we roasted off on the grill and pickled red onions, sour cream and that is all. Nice and simple but full of flavor.

    Jason, awesome! This is making me hungry!
    About 7 years ago I learned the hard way to use nitrile rather than vinyl gloves when handling a large quantity of chiles. I was wearing vinyl gloves while washing 20 lbs of Thai chiles for the hot sauce I was making and my fingers started turning pink and tingling and then felt like they were on fire. Since capsaicin is fat-soluable it disperses right through the vinyl. Now I always wear nitrile gloves when handling large quanties of chiles.

    You, sir, are evil!! I love the way you built the dish in layers, so, yes, as you oink your way down into it, you're not running out of what was just on the top.
    I'd suggest putting that beer cheese on the next omelet I make, or on the cheeseburger I just had for dinner. Or drizzled over some lightly steamed aparagus. Ot better yet, on the nachos I might build using some of the leftover smoked turkey from Turkey Day. (Video is on my channel... LOL) There is no reason you have to limit a pile such as that to jut brisket. The possibilities are endless.

    Great video Jason. Drop that beer cheese on either a burger or a dog. But make sure you use a pretzel bun like I did in my beer cheese pretzel dog video.

      Love the idea of the peppers in the soup - My favorite local mexican restaurant puts jalapeños in the queso and thats what it kind of reminds me of and I LOVE their queso. RT!

    How did you get your sour cream to be more of a liquid in the squeeze bottle? The kind I get is in a tub and it’s pretty thick.

    Three questions on the cheese sauce. I didn't see any flour, any issues with the sauce breaking? Was the cheese a pre-grated Mexican store bought cheese? How does the sauce keep in the frig and how best to reheat? Love the pickled onion idea! That sauce would be great if you added some smoked chilis and just used it as a dip for chips.

      No issues with it breaking. I dont bring it up to a boil just hot enough to homogenize everything. So I used the leftover in the pub cheese burger video where i cut it into slices for the burger. Yes pretreated mexican blend. Agree with smoked chilis - thank you for watching!
