- BBQ Brisket Nachos is about the best gameday or tailgate food you can find. What I like about it is you can make a big ol heaping plate of them and folks can just help themselves. Rarely do you find someone that does not like nachos as long as you stick with just the essentials.
Today Im going to show you how to make a beer cheese sauce using local craft beer this cheese sauce is not only good on the nachos but anything else you would use a cheese sauce on. The first thing that comes to my mind is pretzels. The other thing that I think that takes these BBQ Brisket nachos over the top is the roasted jalapeños. BBQ Brisket Nachos is great use for leftover brisket.
Recipe Beer Cheese Sauce
16 oz of mexican blend grated cheese
8 ozs of cream cheese
12 oz of beer
2 oz of the rub
Combine all ingredients and cook over medium high heat until all cheese is melted and homogenous
To bring Brisket back up make a wake up sauce of 50% water and 50% BBQ sauce. I am using GQue BBQ hottish and put on grill over medium heat until it is warm be very careful not to cook the brisket or you risk drying it out.
Build your nachos as you like em in this video we used - roasted Jalapeños that we roasted off on the grill and pickled red onions, sour cream and that is all. Nice and simple but full of flavor.

GQue BBQ I made it last night and it was fantastic! I didn't have any pickled red onion so I just charred it on the grill with the jalapenos. Thanks for the video!
You had me with the beer cheese sauce. Great looking char on the peppers. This looks sooooo good. You built this properly too. Put that cheese sauce on a hamburger horseshoe!!! It's perfect
All the best Russ My thoughts are with you bud! Thanks for watching!
Jason, awesome! This is making me hungry!
About 7 years ago I learned the hard way to use nitrile rather than vinyl gloves when handling a large quantity of chiles. I was wearing vinyl gloves while washing 20 lbs of Thai chiles for the hot sauce I was making and my fingers started turning pink and tingling and then felt like they were on fire. Since capsaicin is fat-soluable it disperses right through the vinyl. Now I always wear nitrile gloves when handling large quanties of chiles.
haha! That'll do it - Great story although in was not so great for you. We ahh all been there usually takes one time haha - Thanks so much for watching!
That Rocked Jason! Need to make that beer sauce! Nice touch with the pickled onions! \m/

The Real JoeyB Dallas Fort Worth Texas USA utilizing the Traeger Timberline 1300
Sounds delicious! Thanks for coming over and finding us. IM sure lone star would be good in the cheese sauce!
I'm a nacho aficionado, well who am I kidding? I'm a food aficionado😂😂Yours looked amazing and that cheese sauce😍You can put it on a rubber boot and it would be good😂I always use leftover pulled pork for nachos. I can only imagine how good it would be with brisket. Thanks for sharing😃
Yeah your definitely a food aficionado Christy haha! Thanks for watching!
What is the white sauce you put on there sour cream? Looks sooooo good...gonna try this out
Probably lime juice - it was So dang good!
You, sir, are evil!! I love the way you built the dish in layers, so, yes, as you oink your way down into it, you're not running out of what was just on the top.
I'd suggest putting that beer cheese on the next omelet I make, or on the cheeseburger I just had for dinner. Or drizzled over some lightly steamed aparagus. Ot better yet, on the nachos I might build using some of the leftover smoked turkey from Turkey Day. (Video is on my channel... LOL) There is no reason you have to limit a pile such as that to jut brisket. The possibilities are endless.
should probably consult with you for ideas as an omelette sounds awesome with that cheese sauce! So does asparagus heck that will get me to eat more vegetables haha Thanks for watching Moosie!
Remind me to buy you a torch for Christmas. The Bic made me sad. LOL
haha! Unnecessary but thanks!
Great video Jason. Did you get a new camera recently? Videos look great brother! Keep up the great work
Thank you! We started shooting outside instead of inside. The natural lighting helps a bunch as its darker inside.
Great video Jason. Drop that beer cheese on either a burger or a dog. But make sure you use a pretzel bun like I did in my beer cheese pretzel dog video.
Thanks bud - oh man that cheese sauce on either a dog or a burger would be kiler. GREAT Idea with a pretzel bun! That just may be my next video!
Something I like is beer cheese soup. Maybe put some of those roasted peppers in there.
Love the idea of the peppers in the soup - My favorite local mexican restaurant puts jalapeños in the queso and thats what it kind of reminds me of and I LOVE their queso. RT!
Loved that sauce! Can I keep it on the refrigerator and use it later?
I don’t see why not - thanks for watching
💣🔥
Thank you!
Oh man looks great!! Have some leftover brisket from the 4th I’m going to use this for!!! Silly question, the plastic containers you use to put your ingredients in, can you tell me were you got them? Just sub’d!!
I get the containers from my food supplier - I have a restaurant so it s common thing for us to order. I would think you could find on amazon
I know what I'm having for dinner! Thanks stud. How bout dipping popcorn in that cheese sauce? :)
Thats one way to get me to eat more popcorn! Thanks for watching Brian!
Cheeze sause is to thin .. looks good tho .. enjoy soggy chips
also pop you pepper in a steam and remove all skin ,,, will taste just the same if not better cuz no burnt shit ..
On a brisket sammich
Thanks for watching!
Try this exact recipe with steak fries instead of chips, you're welcome 😎👍
Sounds delicious!! Thanks!
Fry an egg and top it with that as well, delicious!!
How did you get your sour cream to be more of a liquid in the squeeze bottle? The kind I get is in a tub and it’s pretty thick.
just squeeze it out of the bottle don't need to add anything to it! have you tried it before? The Sour cream I used came out of a tub also. Thanks for watching!
Three questions on the cheese sauce. I didn't see any flour, any issues with the sauce breaking? Was the cheese a pre-grated Mexican store bought cheese? How does the sauce keep in the frig and how best to reheat? Love the pickled onion idea! That sauce would be great if you added some smoked chilis and just used it as a dip for chips.
No issues with it breaking. I dont bring it up to a boil just hot enough to homogenize everything. So I used the leftover in the pub cheese burger video where i cut it into slices for the burger. Yes pretreated mexican blend. Agree with smoked chilis - thank you for watching!
What is the white sauce?
Sour cream
Cheese sauce a bit too runny I think? Maybe too much beer?
You can add less to keep it thciker
I stopped at leftover brisket come on man..
Mix the sauce with noodles mix some bacon crumbles and top with green onion
Good idea! Thanks for watching!
Beer Cheese Sauce on ice cream with a side of cow meat?
That would be a first for me haha! Thanks for watching!
