Protip - Cook the homemade tortillas on a comal and then let them steam together for a while BEFORE you fry them into chips. That will solve the texture problems you were having. Chips can be made with day old tortillas easy. Great video btw.

Pro tip: you can also use evaporated milk to make the cheese sauce. Has an emulsifier that keeps the sauce from breaking.

Would be super cool if you started having Cockburn do more regular drink pairings in your videos
To fix spilling from a hot saucepan to mason jar, use any hard edged device (handle of for or spoon, , knife, skewer, etc) to bridge the gap between saucepan lip and mason jar. Then pour into mason jar down the edge/bridge.
Once started, the surface tension keeps the sauce on the bridge to land in it's destination without splashing out of it.

Great video! For thick store bought chips, HEB makes them in the bakery. Can get salted or un-salted.

Love the pre-prep idea - turns a high effort nacho to SUPER quick, big batch of barbacoa and freeze into portions, I'm curious, if you make a big vat of the cheese, if you could freeze and defrost ok to use later in the same way. Good pico de gallo takes 5-10 minutes and you could have WOWSA nachos in 15m tops - makes the initial prep seem worth it. Have you experimented with the cheese by chance?
Alternative, nachos, refried beans fried in bacon fat with bacon crisps added back in, dry aged, smoked, and shredded brisket, candied poblano peppers, and shredded cheese lightly baked.
Chud, you have a way with food. Some people just are naturals. Making your own nacho cheese, pickled jalapeños, chips, everything. Thanks for another great video!

Great video as always. I would encourage you to try your own chips again BUT! Make the tortillas. Same everything you did here but form and cook the tortilla. Then cut the tortilla into chip shapes and fry the chips. Frying from the dough I think is what may have been the snag. Frying a cut tortilla like you ended up doing should give better results. Also... fry the whole tortilla for chalupas. Same meat and other ingredients you have here but the first layer? Refried beans. Just a fan from New Braunfels Tx originally NJ. PEACE ✌️

Chuds BBQ, you can make the tortillas in your tortilla press, using plastic then to the grill, two turns and they are done. Cut them and fry them...and that is it.

use a pasta press next time to roll the dough for homemade chips. it gets the low moisture mix as thin as you want. works like a charm

You should modify or build your original designed tortilla press with the handle/lever welded to the front on a hinge for the leverage for the corn tortilla.

The one thing that's missing is pinto beans. They are a staple of south Texas bbq. And nachos of course. I know I'm not the only one that would like to see sides added to the main dish.
The tortilla press was made out of SOLID metal. Yeah, solid pot metal. Most of the time it is the cheap pivot pin that breaks first. They make some from cast iron that can take more abuse.

Funny you use the crockpot method for the barbacoa. I started doing that after using the banana leaves from an earlier episode of yours. Found the crockpot to be easier with probably a better result.
What setting do you leave the crockpot on for the overnight? Looked like Brad was on high?

Also, instead of the red and white paper under the nachos, you should build them on an extra large soft tortilla shell. Once you’re done with the chips, roll up the tortilla and clean up the best way.
CAN YOU MAKE a hot hamburger plate, but elevated? It's popular here in NC. It's a slice of bread (usually sourdough), with a hamburger, topped with fries, and then smothered in gravy.
I think it would be great to make a chud burger and throw it on homemade sourdough bread AND home made handcut fries, and homemade gravy.
(or elevate it with fatty brisket instead of hamburg...)

Very impressive! Not sure if you can get them around your neck of the woods/HEB but there’s a local tortilla chip company in MA (I know, unlikely) and they are hands down the best tortilla chips I have ever had. They are called Mi Niña tortilla chips and I would buy a few bags of those over trying to make them myself any day 😂. Also, you couldn’t have gotten creative and made a more heavy-duty tortilla press?! Come on Brad!!!
