    For 10 years before I retired, I traveled overnight once a week. I had a variety of travel kitchens but finally settled on a 7" mini electric fry pan. I had everything to cook with in a soft-sided cooler (not giant), so everything was small-sized or collapsable. The kitchen worked well, and I could make almost anything in it. On family road trips, I carried an induction burner and a pot that was wok-like and could cook anything. I now have a built-out van with a lot of solar, so I cook mainly with an induction burner, a small electric pressure cooker, and a 12-volt rice cooker. I can even bake using a 12-volt RoadPro. I love innovative kitchen set-ups.

      Is a 12 volt appliance what you recommend? It's hurricane season here & when we evacuate we don't know for how long & how much sun there will be for solar. What's the best set up?😊

    My travel kitchen: Electric griddle, small camping skillet and saucepan, one cup coffeemaker, small toaster oven, small mixing bowls, some spices, small cutting board & knives, cutlery and sturdy paper plates. The hotels always had a frig.

    I love those mini dash machines . I got 3 of those for 6 bucks each . On our trips that’s what I used . We had blueberry pancakes eggs and sausages and it was the best vacation ever!

    I include an extension cord and use an electric fondue pot with my own lid. It’s very small but can cook real food. I also like my travel water kettle and mid size thermos.

    For about 7 years, when I was working in Georgia for the WIC program, I frequently was sent out of town for extended training conferences. I used to take a small cooler with an electric hot plate, a small saucepan, a bowl and plate, utensils, a knife in a sharpening sheath, and a plastic covered microwaveable mug. I was paid per diem for some meals, but it was more convenient at times to just cook in my hotel room. That was 2001 - 2007, before the Dash cooking pieces had been invented!

    Great idea, especially the metal briefcase! I'd tuck a few basic herbs, spices, s&p in too. Plus those instant coffee stick packets (and/or tea bags) ☕

    That’s also a great kit for preppers to keep in their car if they have to evacuate rapidly due to fires, weather, etc. The pots with fold away handles are often found on camping cookware. I have a whole set in a small bag. I just bought a power station similar to yours that I would take along! Toss in a few cans of food food, a change of clothing and toiletries/medications, and go! Beautiful kit - thanks!

    Another tip: if you can bring your food up to boiling point, to slow cook your food wrap a pot up in every towel you have, and this will retain heat for several hours. In this way you can use your hot plate for something else while you have the other part slow cooking. This will work for cooking rice while you prepare your main dish or oatmeal or other things you tend to slow cook. If you're careful you can even wrap your food in a towel and then your bed cover, but maybe leave a do not disturb sign for housekeeping lol

    my go-to hurricane evacuation motel room kitchen equipment includes a 3 cup mini rice cooker. I can cook a small meal in it.
    Every hurricane season I prepare small meals like soups and stews or compact dinners that I vac seal and freeze and keep in a cooler for traveling. I can dump one small meal for my husband and myself in the rice cooker to reheat, or cook small meals from 'scratch'. I bring mini silicone utensils and a few reusable small plates with plastic lids that can also double as storage containers.

    Aside from my content making hobby and other hobbies that make up my content I may be getting a different role at my full time job that requires hotel stays and cooking for myself is a major need to stay healthy so this is great and super informative!

    Use a cooler to put your hotel kitchen in. This way you can unload everything and get ice from the ice machine and you'll have a cooler

    Very smart idea. We do similar but just put in one box for houseware and one box for food when on roadtrips. Kids are older now so not as picky eaters, just food allergies, so helps.

      Same here if we travel by car. We have one with celiac, one has a seafood allergy. If we fly, I pack a skillet and spatula.

    Impressive! The non-appliance portion of my travel kitchen is very similar to yours. I can make do with hotel coffee machines for a few days. For longer excursions, I will include a hot plate paired with a small fry pan.

    Try a Reid set go machine its anything you can think of but I also have the mini waffle machine too I save my plastic liner from my bacon package for a mini chopping boards plus they will roll up and secure they with kids ponytail holders and I found mini utensils too plus mini wooden utensils and mini wooden chopping board that does double duty as hot pad and I carry a girl scout cook out and metal camp silverware inside cook out salt ,garlic& onion powders but I keep the 3 mixed in a Snapple homemade container then put into mini shakers and carry old time Turner and slurred spoon and the handle of the spoon can be used for turning nutmeg doughnuts. And a mini no stick pan that perfect for eggs omelets or hamburgers

    I traveled for work and stayed in hotels out in the sticks 3x a week for a few years and always cooked dinners in my hotel room. I found a 12” electric nonstick wok to be really useful and easy to clean. I ate a lot of stir fries (using spices mixed in a baggie ahead of time). I also made soups and stews ahead of time and vacuum sealed them, sometimes with cooked rice, and then just boiled water in the wok and tossed in the bag to heat them up. Homemade and easy! I packaged everything in my cooler.

    I'm a retiree who's living overseas in multiple countries.
    I have several "travel kitchens" in 3 countries...México, Colombia and the United States.
    My top 3 travel kitchens are equipped as follows:
    2 Misen 5 ply 10" skillets, stainless steel and original non-stick pans with Misen silicone lids.
    1 Matfer Bourgeat 11-7/8" carbon steel pan (original version).
    1 Hercules Cast Aluminum 4.3qt. Dutch oven.
    2 Brandless 5 ply stainless steel sauce pans, 4qt. and 2qt.
    1 portable induction cooktop...
    ...and 1 French press with a digital scale.
    All my travel kitchens have a comprehensive set of knives, kitchen utensils, measuring cups/spoons, strainers, trivets, stainless steel mixing bowls, knife sharpener/honing rod, towels, etc.
    All these items are packed inside a rolling duffel bag.
    My permanent kitchen in the Colombian Andes has 12" Misen pans, 6.8qt. Hercules CA dutch oven, OXO 3.5qt. saucier and no carbon steel/cast iron skillets.
    When I'm not living in México or Colombia...I'm taking a travel kitchen.
    Yes, I pay for an extra bag and it gets a little more difficult as I grow older...but the ROI is immeasurable.
    Having the power/knowledge to properly select/shop, prepare/prep/mise en place and cook your own food, as you see fit, is invaluable.
    This is a skill set that has been denigrated, ridiculed and/or abandoned over the past few decades.
    P.S. I attempt to prepare authentic Italian and French cuisine...and a few of my family's recipes.

    I’m surprised no Dash Mini Rice cooker . We used to always take a hot pot for tea and coffee and instant oatmeal in our room. Seems like lots of motels now have free (included in your room rate) breakfasts.

    I had a kit with a mini rocket stove that could burn twigs, several 5 inch and smaller pans, 2 cup kettle, and a roll up tool kit of mini tools very similar to yours. All stored in a backpack. Mostly used with grandchildren to make tea, fry spam, etc. Now most of the tools have made their way into my rv kitchen. I too love small cooking kits! I have the Dash waffle maker.

    My Mom would do the same thing when we were traveling. We were a family of six and she put all the basics in a standard size suitcase (this would be back in the 60's). It had everything you could think of. The suitcase and a small ice chest were standard for traveling whether for 3 weeks or for 3 days. Looks like you have yours very well set up. Good job.

    I have a knife bag that has a set of knives, some wooden spoons and some silicone spoons and spatulas, and a couple sets of silverware and a simple can opener. Then I have a large zippered bag that has a Dash mini airfryer with a couple small pans and a silicone liner stored inside it, a Dezin electric pan, a folding kettle, a Dash mini griddle, a Dash mini waffle maker, and the smallest sized George Foreman grill. I also have a very small colander, a couple of plastic bowls & plates, a couple of very small cutting boards in different colors so that I know which is for produce and which is for meat, a zippered waterproof bag that has a mini bottle of dish soap and a silicone dish scrubber, a plastic scraper for cleaning all the food off before washing, and a nylon scrubbing pad. I have a drying pad like that one you have (mine’s teal and came from Dollar Tree) and a similar dish towel and a couple of the silicone trivets and a pair of the small silicone mitts, and a heat proof silicone mat that I can roll out to protect the furniture and give myself a surface to prepare and cook my food. Occasionally I will bring other dishes, but these are generally the things I pack. I have a couple folding reusable shopping bags that I use for purchasing groceries once I get to my destination. For storage, I have some silicone reusable storage bags called Stashers. They are easy to carry because they are flat when empty. I have a few small silicone folding containers as well that fold up pretty small and flat. When I’m out on the road, I am usually gone for 2 weeks and having a lot of dietary restrictions, I need to be able to be in control of my food, so I bring a lot of things, but I can fit them all into my big multi-bag insulated zippered tote. I also keep a Eureka double burner camp stove, a couple of bottles of propane for that, and a Ridge Monkey pan (it’s from England and it’s got two pieces that hook together and you can use them as a pan with a lid or as two separate pans) in my trunk for cooking at picnic areas. I also have a couple gallons of water and a roll of paper towels in my car at all times. I’m a bit maximalist. 😂 I like to be prepared, though, and give myself a comfortable experience having my things with me.

    I have a travel pantry with small jars (vitamin bottles)of basics like Sugar, Flour, Popcorn, Hot Breakfast Cereals, Tapioca, Grains (Wheat Berries, Pearled Barley, Oat berries, etc) as well as spices. I also pack utensils, basic dishes, Ziploc bags for storage, and cleaning items dish towels, all in a 12"x18" plastic crate that fits nicely on the floor behind the front seat of my car. I can make a wide variety of dishes when we travel to places with a small kitchen by shopping only for meats & veggies. Your kitchen would extend this idea even further.

    I don't have a travel kitchen but I love the one you have put together! In fact, I know several storm chasers that could probably use a travel kitchen setup since often there are few places open for food, besides convenience stores. Buy a few boiled eggs, chop for egg salad, get some bread etc. Kind of barebones dinner but better than roller food maybe! ha! Anyway I plan on travelling in 2025, so I will pick up a metal case and see what I can put together. Thank you for sharing!

    We always stay in a house or condo. For shorter trips we stay at z hotel with a kitchen. My son cannot have gluten and I bring a nonstick skillet and spatula to make eggs etc.

    thank you for this.
    During the 2020 lockdown and we traveled and hotels weren't delivering or when food did arrive it was cold and nasty.
    We started to bring out Instant Pot Mini, with a cooler and a kitchen set similar to what you have, with a cutting board.
    We would use the cutting board to cover the bathroom sink and put IP Mini on that.
    Turn on the bathroom fans and we'd cook our meals that way.

      It has been the same with every type of meat that I've tried. The temperature of this appliance does not get hot enough for a good sear.

    I use coffee can lids, or any large plastic lid, as cutting boards and also as a small plate. It makes a perfect plate for a sandwich or s small serving of fruit. A plastic tennis ball tube holds our eating utensils, carrot scraper and small sharp knife! I had to shop thrift stores for a "butter knife" which was short enough to fit the tube, but it works great!

    I do travel with a mini kitchen for road trips- we have included a mini butane burner and collapsible water bottle and a set of 6 spices as well as salt/pepper/hot sauce.

    My husband works for the airline so we fly quite a bit. The dash mini's go everywhere with us. I got small cases for them to travel in. I carry most of what you have here in my checked luggage. Love the way you have the briefcase. I might make one for the car! Thanks

    They used to make those little dash type cookers with different inserts so one machine could be a griddle, a waffle maker, bake cupcakes, etc all with one machine.

    Cool idea! Never thought of putting some basic cooking tools in a metal briefcase for travel. I’d say you’re only missing coffee making equipment. Swap the waffle maker for an Aeropress.

    I always lug My Crock-Pot with me when I travel, I also bring my dash waffle maker because you can do burgers, eggs, waffles, chicken, little pork cutlets and potatoes and I don't know I probably leaving out some other things but it's great for a quick bite but I use the crock pot for a larger meal that will last for a couple of days and I usually do a roast of some kind or pork chops or ribs something that we won't get tired of eating for a couple days.

    I have a travel kitchen too. Mine includes my dash griddle and waffle maker. Also an electric kettle cuz most motels coffee makers make gross tasting water. I include metal dishes as yours are but I also try to bring items that can be used in a hotel microwave. So to make a perfect hotel omelet I carry a ceramic handled bowl with a vented lid that I got in Little Tokyo in LA. Sometimes I bring my mini rice cooker that can be used like a cooking pot and not just rice. I also have an egg poacher/ hard boiled egg cooker that I might bring depending on the trip. I carry the electric appliances in a shopping bag but the dishes and accoutrements in a mini suit case too. It has a tiger print on it so all my friends know when I ask them to hand me the Tiger Box. lol. It was an amazing thrift store find. My dishes are small matching set of enamelware bowls, plates and tea cups I found at an antique store during my travels. I love my silicone mini spatula and spoon. Most items are blue so I know what goes in the kit. I even found some blue checkered napkins at a thrift store to bring as placemats or pot holders or…..napkins. Generally I bring a small zip lock of a variety of sizes of ziplock bags and two plastic mugs with locking lids that serve a variety of purposes. At home I tend to use only glass but for travel I found the plastic, tho not my first choice, serves some good purposes. My colander is the collapsible one and so is one bowl. I take the non appliances kit with me camping as well. The bowl I use to wash dishes and the colander as the dish drainer. I have a separate kit of Stanley cookware for camping when I cook over the fire or on my gas or wood campstoves. At home I keep,all those travel appliances in a soft sided cubby box in my kitchen cuz I like to use them at home as well. lol. I mean who doesn’t want to make just one mini waffle to go with breakfast? If I have the time, I’ll make three or four and freeze the rest. So easy to reheat. Thanks for your post and inspiration

    Do you use a portable stove at all like to boil water? I’ve made my Stanley lunchbox coffee set up. I can use either a Trangia or a butane backpack stove. Note: I only use a flame in the bathroom on a tile surface 😊

    This is awesome! I never considered getting a travel kit together. And I have food allergies.
    I have two of the dash wafflemakers. I can make up some of my waffle mix to go with it on a road trip. I think I might get that Dash Griddle because I can see it different options like making eggs.

    That is great! So compact and complete, grest plan, and i love your metal briefcase to hold everything and function as a cooking surface. But wondering-- do you not take a hotplate? That's what i use in a hotel, and here at home, too, don't have a stove. By the way, just a tip-- i recently got the best can opener I've ever used-- the Swing Away brand manual can opener. It's an old brand, strong and reliable, eady to turn and wirks very well, and perfect for me as i have arthritis and can't turn some can openers. Great video, thanks! I'll be on the lookout for a briefcase like this-- perfect.

      Here in Australia cooking in a hotel room can be reason for you being asked to leave immediately with zero refund. Cold food is perfectly fine. Hotels here provide both an electric kettle for tea and instant coffee & a tiny fridge (with cups, glasses, teabags, instant coffee and little containers of shelf stable milk or a tiny jug of fresh milk. No creamer, which is hard to find in most supermarkets).
      I get around the rules by making cold meals - muesli & shelf stable milk, sandwiches with tuna & sweet chili sauce & whatever salads I've picked up, dolmades from a can with hummus and olives, fruit, ploughman's lunch, spring roll wrappers (tiny to carry) lightly soaked in water then wrapped around sliced Asian veggies from a jar/can and served with a dipping sauce of peanut butter and sweet chili sauce mixed together

    Hi Counter Cooking Cook! I have to evacuate for hurricanes & travel light & fast & may or may not have a home to come back to. Which of all the appliances you've demonstrated would you recommend to use with a power bank? And, which brand & how much wattage to have in a travel kit?

    I don't have a travel kitchen. Instead I have a storm/hurricane kitchen. Just some odd and ends that that can cook with Sterno or bio fuel. Any advice using solar power with solar panels?

    How do you cook using the stainless pots? Why a waffle maker when hotels have those in the serve yourself breakfast in the dining room. I always stay at hotels that provide breakfast as part of the room charge.

      I believe I mentioned in this video that I took a waffle iron with me because I wanted to film videos with it. I put the stainless steel pots on the mini griddle.

    That's a lot of stuff! But no coffee maker?!
    We like the HotLogic mini oven for road trips. Plug it into the car through an inverter and by the time you get where you are going, the food is hot without overcooking. The cookware can store leftovers. This is minimalist, but I don't want to do anything complicated on the road. 😊

      I normally don't drink coffee. The HotLogic Mini is great for heating things up in the car while driving.

    The plastic lids can be used as plates.Just don't cut on them with sharp knife.

    Great video! For hotel cooking, how do you handle storing food? I read lots of hotel mini fridges are not cold enough to refrigerate food w/o hitting the danger zone temp.
