The last one I made had tomatoes, red onion, mushrooms, broccoli, garlic, a tiny bit of vegan cheese and lots of spinach. Baked it in the oven for about 15 minutes. Really tasty & filling!

You can add matcha powder if you like matcha and coconut milk makes it taste lovely too! I also add spinach to whatever I am making for lunch, even curries or veggie stir fries, just add some in the mixture and you won't even know it's there ☺️

I love baking cauliflower. Rinse the whole cauliflower, cut the leaves and the tail part. Then start cutting it like you'd cut an orange (round slices, around 0.75in thick). Some florets will fall but you'll put them in the pan anyway. Place the slices on the pan, drizzle olive oil, salt, pepper, and put into the oven at around 450F for about 35 minutes. I pair it with a slice of baked salmon and the dinner's ready!
I make a smoothie that tastes like a green apple jolly rancher and is packed with spinach. I blend plant-based milk (coconut almond is my favorite) with the spinach separately first, just to make it really smooth and make it easier to pack in the rest of the ingredients. Then I add frozen banana and frozen mango, granny smith apple with the skin on, and the juice of a lime. It's honestly delicious.
I already liked this video and then I saw the sofritos part and it turned into my fav! I'm obsessed! I love to add spinach to a scramble (sauté lightly with garlic.. sooo good), you could also make a spinach tarte (with onions or mushroom which complements it), you can do spinach enchiladas (some of my fav at my local Mexican restaurant) and also spinach to a green salsa on top, spinach quiche, spinach artichoke dip, and of course adding it in a smoothie with your fav fruit

I one time made a dandelion and spinach chimichurri. it's amazing on anything grilled. most "one pot" meals I make such as curries, tomato sauces, stir fries, soups etc... I usually just toss a hand full or 2 of spinach in at the last minute and just allow it to wilt into the dish. It's the same with any leafy green really, just last night for example I made a chickpea and cauliflower curry and at the last minute I added shredded kale and brussels sprout leaves. I also usually add bunches of spinach in with my cooked grains at the last minutes of cooking.
A quick way I get spinach into my diet is to add it to literally any cooked dinner I have. If I make tomato soup, I just put it in the pot once the soup is almost done cooking, and it wilts and adds some more texture to the soup. If I have pasta, I just stir it into the pasta when it's done cooking, or I mix it in with the pasta sauce. It's so easy to add a ton of spinach because it cooks down a lot. It's definitely my favorite vegetable because you can add it to so many things!

I usually have a inch-high pile of veggies on my pizzas, lol. I also second using spinach in pesto (or half spinach half basil)! For other veggies, I usually roast a bunch of veggies at the beginning of the week and eat them as a side dish, and also cut up raw veggies that go well in hummus!

I'm someone who can eat soup all year round, so every time I make a batch of a broth based soup I always add TONS of kale or spinach. You could seriously squeeze in two bags of spinach into one large batch of soup and the have it for a few hearty meals. Tofu hold up really well in soup too if you ever want to add some for more protein! Try looking up "detox soup" or "meatless Italian wedding soup" and start from there!
When spinach gets heat it shrinks a lot, so you can use it in soups, pasta dishes etc. If you bake bread then you can also add chopped pieces into it ^_^
To get more spinach in, I sometimes make it into a pesto sauce with walnuts, lemon juice, spices, and a little olive oil! so delicious and you can use up a ton of spinach if you blend it really well!

You can cook your spinach with hote wather and then you can put them in a cooking pan with some oil, salt, garlic and pepper. It's delicious

I'm someone who can eat soup all year round, so every time I make a batch of a broth based soup I always add TONS of kale or spinach. You could seriously squeeze in two bags of spinach into one large batch of soup and the have it for a few hearty meals. Tofu hold up really well in soup too if you ever want to add some for more protein! Try looking up "detox soup" or "meatless Italian wedding soup" and start from there!

When spinach gets heat it shrinks a lot, so you can use it in soups, pasta dishes etc. If you bake bread then you can also add chopped pieces into it ^_^

To get more spinach in, I sometimes make it into a pesto sauce with walnuts, lemon juice, spices, and a little olive oil! so delicious and you can use up a ton of spinach if you blend it really well!
