Mayonnaise is my nemisis. It took me ages to get it to work in a coctail shaker, props for getting it first try. Your patience with the oil is better than mine.

The skin contacty/sedimenty/cloudy whites or oranges work because of the way chilli reacts with it - if you have a red wine with chilli, the tannin ends up tasting sweet rather than the usual drying effect, and will look out of balance. In the whites & oranges that tannin, sediment or cloudy character gives the impression of more fruit/brightness/softness when you hit it with spice, the balance is maintained as they are normally not as concentrated and rely less on big primary fruit flavours
Interesting! We've not heard it phrased that way, but it makes total sense - chilli + tannin = sweet. I wonder how much we could stretch this in an experiment...how much heat would it take to match a Barolo?
@@wineforthepeople Barolo might take a little heat, maybe an old red where the fruit has fallen away except it kind of also feels like the wine is getting torn apart in your mouth - I think a lot of the lofi stuff has that out of kilter structure that the spice mutes and smooths over… sodium analysis next for fruit amplification 😂

@wineforthepeople well the wine that got my partner into "natural" wine was gentle folks rainbow juice. Not pet nat I know, but stuff along those lines work great. We had it with belles hot chicken and loved it. Their jumping juice would work great too. I think plenty of fun, " park wine" pet nats would hit the spot IMO
