Peru’s Asian Infusion: Influences from China and Japan

The multicultural stew that is modern Peru gets much of its spice from two waves of immigration-the Chinese in the mid-19th century, and the Japanese at the turn of the 20th century. These two immigrant groups have put down roots, and their descendants are fully integrated into Peruvian life. But at the table and in markets, such as Lima’s Central Market, the Asian impact is hard to miss.

We Peruvian have received many foreigners gently by 2 centuries of history. We don't segragate, we ASSIMILATE everybody, that's why our Peruvian cuisine and people have a little bit from everybody and everywhere. Greetings from Lima, Perú :) 🇵🇪

Peru is a nation of immigrants. Wtf? They're not foreigners-- they're Peruvian of Chinese descent. Peru was originally inhabited by Indigenous tribes- then came the flow of immigrants, colonizers, etc

Not exactly. The Japanese (and probably Chinese too) were resented for their success at certain points and massively discriminated against. Your rosy picture doesn't reflect reality.

Lomo saltado is 100% Peruvian dish. It has nothing from China. The original recipe was published the year 1900, and shows that it was always a Lima dish, without any Chinese influence. Lomo saltado is essentially beef, yellow pepper, purple onion, tomato and potatoes, none of those ingredients together is popular in Chinese cuisine, the yellow pepper is Peruvian, the tomato and potatoes are Peruvian, the purple onion is not It is used in the chifa, it is a fallacy that is said to have Chinese origin, even the word SALTADO is by the French word sautée which it means "saltar" in spanish. Lomo saltado flambé is also a French technique, it didn't exist in Chinese cuisine.

I live in New York, for more than forty years, and since I started living in Port Chester, I said to all my family, there is a great difference between chinese food in USA, and what we call chifa in Peru, the flavor are incredible, the taste it's just different. There are many influences in peruvian cuisine, the spanish came and they brought, what they called moors, moros, so the ifluence of they are the alfajores, the picarones, african influence and so on, imagine a ceviche, without the japanese influence, our aji amarillo is just unique, and yes, they asimilate, we don't hate people, the way other countries do, you only have to see our soccer team, they are a mix of all our people and they are represented, imagine how many million of blacks and other peoples live in Peru, I see other countries and you only see one or two cultures, do you really believe, they don't have other minorities?

The truth is most Spaniards who came to the Philippines are from Andalucia, Basque Region, and Madrid. Greeks from Malta, as well as Italians from Sardinia, arrived with them; then French from Gibraltar and Camargue migrated to the Philippines too and the Portuguese settled in many provinces too. These people started to call themselves “FILIPINOS.” They wanted to break away from the power of the KING OF SPAIN. Only those “Castilians, Argentinians and Mexicans are loyal to the king during that time.” They studied and learned all the native dialects in the country; they mixed the Spanish creoles “Ermiteño and Basque Caviteño” with the local dialects and created the “TAGALA” known as TAGALOG. The Native locals of the country were called “ INDIOS.” They thought they were similar with the Incans, Aztecs, and Pacific Islanders.” Governor Narciso Claveria not only imposed the Spanish Names but FORCE ALL OF THESE EUROPEANS TO INTERMMARY WITH THE LOCALS. NOLI ME TANGERE explains that the “MODERN FILIPINOS are a mixture of EUROPEANS, LATINOS, AND ASIANS.”
