Exactly how I cook soft boiled eggs and you're right: they always turn out perfect. One trick I also do to make peeling easier is add about half a teaspoon of baking soda in the boiling water. When I crack the egg, I start peeling the tips of the egg where the membrane is more separated from the egg which makes it easier to get through without breaking the flesh. I totally geek out on soft boiled eggs too; it's like my favorite thing in the world!
Cold water does help peel the eggs! Also, if you place the shelled egg in a mason jar, put the lid on and shake it, the shell will be broken up. From there you can just peel off the membrane with the shell very easily. 😊

Lol One tip my mother-in-law gave me & I have found that works to keep the eggs from cracking during the boiling process is to put them in the pot in the beginning when you fill it with cold water before you set it on the stove because then they & the water are the same temperatures starting out & stay the same temp together as the water & eggs heat up throughout the boiling process. 😊

These eggs @ 6 minutes are at room temperature when you add them, or right out of the refrigerator?
I took them out when I started boiling the water. So, pretty much straight from the fridge.
