      Are Damascus real Japanese knives? I got scammed with fake Japanese knives a few months ago that were advertised by another channel. Anyone reading this do not get Kamikoto Japanese Knives. They're fake and not even made it Japan. I will do more research about Damascus.

    I'm not the one who nags when a korean is preparing my taco, however him showing alternatives paired with enthusiasm is just unreal it's the equivalent of saying "it's okay if you don't have everything"

    I had some of this in a restaurant and it was so good, I want to make this and bought the noodles, I have all the other ingredients but ginger so off to the store I go.

    Just made this recipe. It turned out really great!! Has the same flavor as the yakisoba at my hometown spot. I didn’t have any pork belly, so I used pork tenderloin and bacon. Amazing!

    Nice to see a recipe that doesn't say use ketchup in a dish I've never seen a restaurant put ketchup in. Certainly an art getting the sauce correct.

    OK. Story time:
    I was stationed in Okinawa in 1992 at MCAS Futenma. There was a restaurant at the bottom of the hill leading to the front gate called "My House" that made the most amazing Yaki Soba, served in VERY large helpings, perfect for a young Marine burning lots of calories.
    When my wife arrived on the island a couple days after I'd left for the Philippines for a month, "My House" was the first place she could find food at that hour.
    I'd never heard of the dish, which surprised me. My mother had been stationed in Yukusuka in the early 60s and brought a love of both Japanese food and Judo home with her.
    Anyhow, fast forward to a couple weeks ago and my son (a Marine stationed at Camp Hansen, about 40 minutes away), dutifully made his way to My House to eat Yaki Soba in order to report back to his mother and father.
    Brothers and sisters...
    My House is still there...but they don't serve Soba anymore 😢
    My son had a steak, which I'm sure he appreciated after eating in Marine Chow Halls since November, but it was not the cultural experience I wanted for him.
    Anyhow, Champ, thank for a trip down memory lane. I'm going to get my daughter to make this recooe as she has already demonstrated her ability with Pad Thai.
    Yaki Soba is better.

    I was curious about the original recipe. Unfortunately, in my country they mostly use "Dolco Gold Egg Noodle" but it's not even chewy. ( I live in Turkey.) Here, they use the worst / cheapest / lowest quality noodle they can get their hands on.
    In the video, the noodles at 4:10 looks delicious! Sadly, I don't know how to find it here. Also, I don't think Asian restaurants in Turkey use Mirin for the sauce, mainly because it would increase the cost. I feel like i'm missing the whole experience!

      You can use pork belly or pork cutlets, both sliced thin. There is an entire wall of various noodles at your local Asian grocer. Look for one of the pkgs that say "soba noodles".

    Trying to follow the choice of oil. You use rice oil for this dish, but use a lot of grapeseed oil in other dishes. Is this preference or is there a taste difference?

      I’m not the most knowledgeable, so I could be wrong, but I believe they are both neutrally flavoured oils, and so the taste is negligible. This is so that it doesn’t mess with the flavour of the final product like, say, olive oil might. Grapeseed should be perfect. :)
