    i love onigiri. one of my favourite dishes. i wish i could by some at my groceries just like in japan but i make some decent spicy tuna ones by myself from time to time. gonna try your recipes next time :)

    I like making onigiri and try new onigiri recipes! I will definitely try these! I often make some for school lunches in the summer. My favorite filling for onigiri is tuna miso mayo! I would love to make the umeboshi one, because I love umeboshi, but I can't find umeboshi where I live. Thank you for another great video!

      @@debras3806 Hi! The filling is really easy to make! I hope you will like them! Here is my recipe with a lot of little notes to help you to tailor the recipe to your own liking.
      For the ingredients, you only need miso, you favorite mayo, tuna and salt and pepper. The miso I like to use is red miso with dashi because its really flavorful. For the mayo, I don't like the typical Kewpie mayo, so I use regular Hellmann's mayo. And for the tuna, well I'm lazy, so I just use flaked canned tuna in water, that I drain. But you could also cook some fresh tuna, just like Champ did with the salmon.
      For the quantities, I like a stonger miso taste so I use an equal amount of mayo and miso, about 1.5 to 2 tbsp of each per can of tuna. But if you're unsure about if you want a stong miso taste or a more subtle one, I'd suggest you start with 2 tbsp of mayo and 1 tbsp of miso and then ajust the taste to you preference from there.
      To make the filling, you start by mixing the mayo and miso together until completely combined there should be no more clumps of miso in the mayo. Season with a bit of salt and pepper. Mix again. Then you add the miso mayo to the flaked tuna and mix again until all the tuna is covered in mayo and the mayo is spread evenly in the tuna. The tuna filling should hold itself together without being too "wet". And there you have it your tuna miso mayo filling is done! For the onigiri, I like them with a generous amount of filling, so I use about 1 tbsp of filling per onigiri. You make the onigiri just like Champ showed with the salmon and beef.
      Just a last extra note here. Once you have you miso mayo, you can actually use whichever protein you want. My bf doesn't like tuna so I sometimes switch it with some cooked chicken that's slightly season and I cut the chicken in tiny little pieces to get a similar consistency as the tuna.

    Please tell me where to get that grill insert, I can't find a stainless steel wire mesh like that to put onto a butane portable stove.

    I too had lots of rice from the Kombini and Supermarket with other stuff to the hotel room to eat, but I did shy away from ONI GIRI and I do regret... stuff for the next travel... always say this, never "Oh, I missed this" always "NEXT TIME!"

    How long do they keep in refrigerator for generally?

      Onigiri is generally not for kept in refrigerator, for cold cooked rice gets hard and dry. It can still be okay a half day to eat, like in Bento/lunch box. You can warm up a cold onigiri in the microwave for about a minute.

      I used a simple wire grill but you can use a normal fry pan or griddle fry pan if you like!

      Try the short grain rice like sushi rice. They are more sticky, so they hold together well.

      You could use a small pot or saucepan for burning up alcohol and frying pan or baking sheet with oven to make bonito flakes breaks more simple. But with bonito flakes there would be some tuning. Because all stoves and ovens are different, just like pans and pots. So it's only for grilled one and with bonito flakes, so you could make other variations without microwave.
