My Grandma (in San Antonio) always called enchaladas “enchalalies”. In her honor, we have always called enchilada casserole enchalalies. Be sure to see my video on how to make enchalalies: • Enchalalies!
Ingredients:
Small corn tortillas (if making individual casseroles)
Canned chicken (I use home canned)
Olive OIl
Diced green chiles
Shredded cheddar cheese (I used raw sharp cheddar from Azure Standard)

Pantry cooking at its finest! Grandma’s Enchalalies … the first entry for your essential pantry cooking cookbook! Hint hint hint 😊 Was thinking you must have slowed down with work and are getting more rest- then you said your are so busy and have such limited time lol! Sorry things haven’t slowed down yet but it sure doesn’t show! You look fantastic! Will be making these and freezing the extra. It will be so nice to have something “real” to heat and eat the day we arrive back to the homestead after so long on the road working. I usually don’t have enough energy or time to even make it to the market when we arrive home, and at our age fast food is not worth the convenience. Looks so delicious! That is my favorite brand of green chiles. I buy the large jar at Costco but sometimes Sam's Club has a pack of smaller jars which is nice. I don't have to worry about using up a big jar. I'm going to have to try this in a casserole dish or something as I don't have any oven proof dishes like you have.
