  • I made Browned Butter Chocolate Chip Cookies with sourdough discard and fresh milled flour. And they are absolutely delicious!
I am continuing my experiments and learning how to make delicious baked goods with freshly milled wheat berries. And it is a learning curve! But this recipe is simple to make and a healthy version of a favorite! I found this recipe at Grains In Small Places, but slightly modified it: grainsinsmallplaces.net/the-g...
The first part of the video is about the nutrition of whole wheat berries, and why to use them, followed by the recipe. So if you don’t care to watch that, just skip forward.

I am glad you're back. I've only recently begun researching getting into getting a grain mill and milling our own flour. Going to look into that book. ❤

Thank you. I really love my Mockmill grain mill, but there are others that are good also. That book is full of so much information, but I usually measure grains/flour by weight. She uses cups and Liters. I want to convert those measurements to weight, although I am going to try some recipes by cups.

I’ve began milling my own flours again after taking years off. I have a WonderMill but recently bought a NutriMill. I will be using both, despite getting flack for not giving my WonderMill to a family member. I like Buckwheat and it’s recommended to use a steel grinder for that. I think it’s very important that we hear more of “the talk” of why we need to be prepared in certain areas.

I saw where you had ordered your soft white grain from Azure standard and I was wondering if you’ve ever had any trouble with bugs in it I know you have to put it in like a large white bucket and a sealed lid I want to put a gamma lid on it and then did you put anything in there to keep the bugs away or have you had ever had any problems with that? Which grains have you ordered from them?

I know some people have reported problems with their grains (not bugs, but chaff, stems, and cover crop seeds), but I haven’t had any. I have been buying their grains in bulk for several years, and all have been good. I store them in buckets, some with gamma lids for access to the ones I am working with, some with regular lids. Long term I will usually use Mylar bags with oxygen absorbers, but otherwise I just pour into a clean bucket, nothing added.
I have bought hard white and red wheat, soft white, hulled barley, einkorn, emmer, spelt, Kamut, Durum, corn, and probably others that I am not thinking of right now. I like having a wide variety, and being able to walk into my pantry and grab what I need.

I had that happen once. I found out that I had not completely pushed down on the dough hooks.
