Any man may take a life, but only a king may give it back. Alfred understood the best way to defeat his enemies was making them his friends because if you go the route of slaughter if even one wolf survives the flock is not safe.

The problem is that the Catholic church at that time was a political power itself. If Alfred were to punish dissenters from the church en masse (and there would be, with such an edict), he would immediately make enemies of the rest of the Christian kingdoms of England, not to mention the Frankish empire across the channel and the papal power (limited as it was at the time) in Rome.
Both shows have a pro-pagan anti-christian bias. Sometimes its subtle but sometimes its painful. At least Vikings shows the reality of living in a world where glory and renown are the highest ideals, with only blood-oaths binding people together. An endless cycle of revenge. But Uhtred is always shown as honest while all the Christian characters are shown as hypocrites. In both shows christian monks or priests that 'hang out' with the pagans are shown to be more happy and less wound-up. Its a pity that such a bias exists because an opportunity is lost to show more texture in the history of Northern European culture.
Good acting by Alfred, but considering he was a devout Catholic historically, I am confused to why he is trying to legislate Protestant policies from after the Reformation when that was around 700 years later.
Because in this series he's the son of a warrior monk who was the friend of a Viking king that exists only in mythology, and not that of Aethelwolf. Vikings consciously plays with history, bringing in later events for the purpose of character development. It's part of the fun and challenge of working with Viking history, since the Saxons actually recorded their history in writing and in this period the Vikings still didn't have much use for their written language, aside from their runes. The series purposely deviates from history, which anyway is a mess for the Vikings. People get into endless arguments about whether the sagas represent historical record or should be considered literature. Even in the academy.
Because it will look counterproductive to depict a competent king who happened to be also a devout Catholic. It’s easier to opt for the super-old stereotype of the Catholics being ignorant and obscurantist, when actually all inventions and cultural advancements during Middle-Age in Europe were carried out by Catholics, sponsored by Catholic rulers and the Church herself.
